Traditionally speaking, a pudding is made on the stovetop and thickened with some kind of starch. Pots de Creme is baked and uses eggs to thicken and bind the mixture. Why is my Pots de Creme grainy? There are two possible reasons for this. The first being that you did not heat your mixture for long enough, and the sugar did not successfully dissolve. The second being that you heated your chocolate for too long before adding the cream, and it burned or seized. This could also be caused by using low quality or old chocolate. Can I use white chocolate to make Pots de Creme? Yes!
