What is Pots de Creme?

Pots de Creme is a delicious French dessert that means, loosely translated, “pot of custard.”  Traditionally, a custard is made with eggs and milk. But my shortcut version is closer to ganache and made with chocolate chips, sugar, and cream. 

What is the difference between Pots de Creme and pudding?

The answer to this lies in the traditional methods of making each dessert. Again– my easy version is not a traditional recipe and flirts with the line of actually being more ganache than custard.

Traditionally speaking, a pudding is made on the stovetop and thickened with some kind of starch.  Pots de Creme is baked and uses eggs to thicken and bind the mixture.

Why is my Pots de Creme grainy?

There are two possible reasons for this. The first being that you did not heat your mixture for long enough, and the sugar did not successfully dissolve. The second being that you heated your chocolate for too long before adding the cream, and it burned or seized. This could also be caused by using low quality or old chocolate.

Can I use white chocolate to make Pots de Creme?

Yes! But, as always when working with white chocolate, use a double boiler to melt the chocolate or be sure to work with a medium low heat on the stovetop. White chocolate pots de creme is delicious with lemon curd or homemade fruit sauce on top.

Ingredients

  • 1 cup high-quality chocolate chips
  • 1/3 cup sugar
  • 2 cups heavy whipping cream
  • pinch of salt

Instructions

  1. Over medium heat, stir together the chocolate chips and the sugar until the chocolate has melted completely.
  2. Gradually mix in the cream. Bring to a low bubble and continue to stir until the mixture has thickened to a pudding consistency (this may take up to 10 minutes).
  3. Divide the mixture evenly between 6 small dishes (ramekins, small cups, shot glasses, etc...).
  4. Let cool at ROOM TEMPERATURE (don't put in the refrigerator) for 3-4 hours until the mixture has cooled completely.
  5. Serve with toppings and garnishes of choice! Try my homemade whipped cream recipe.
