Chocolate Peanut Butter Cup Cake

Fudgy chocolate cake layered with rich peanut butter frosting, peanut butter cups, and a rich peanut butter chocolate ganache make this an excellent cake to share with a crowd.

Ingredients

Peanut Butter Frosting

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • vanilla extract
  • 3 1/2 cups confectioners' sugar
  • 5 tablespoons milk

Peanut Butter Chocolate Ganache

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter

Topping & Filling

  • 10 Reese's Peanut Butter Cups

Instructions

Prepare the frosting:

  1. Cream together the peanut butter and butter.
  2. Mix in the vanilla and a cup of powdered sugar.
  3. Continue to add the powdered sugar a cup at a time, alternating with the milk. Scrape down the sides as needed.

Assemble the cake:

  1. Spread frosting over one layer of the cake. Chop 6 of the Reese's cups and layer them over the frosting.
  2. Place the second chocolate cake on top and spread frosting over the entire cake, reserving some for piping over the ganache.

Make the ganache:

  1. Melt together the chocolate chips and the peanut butter. This can be done in the microwave in 30-second increments or over low heat.
  2. Spread the ganache over the cake.
  3. Garnish with additional frosting, ganache drizzle, and the remaining Reese's cups (halved).

Keep chilled until ready to serve.
