Ingredients

  • 1 1/4 c all-purpose flour
  • 1/2 c Light Brown Sugar
  • 1/2 t salt
  • 1 t baking powder
  • 1 t pumpkin spice
  • 1/4 c pumpkin puree
  • 2 1/2 T vegetable oil
  • 1/2 c milk
  • 1 t vanilla extract

Cinnamon Sugar Coating

  • 4 T unsalted butter, melted
  • 1 c Extra Fine Granulated Sugar
  • 1 T cinnamon

Instructions

  1. Preheat oven to 350ºF.
  2. Whisk together dry ingredients: flour, brown sugar, salt, baking powder, and pumpkin spice.
  3. Add pumpkin puree, vegetable oil, milk, and vanilla extract.
  4. Gently mix until batter forms.
  5. Transfer batter to a zip top bag and snip corner to easily pipe batter into a well-greased doughnut pan.
  6. Bake for 13-15 minutes. Insert a toothpick to check for doneness.
  7. Meanwhile, melt 4 tablespoons of butter and mix together sugar and cinnamon in a medium bowl.
  8. Let cool for about 5 minutes. Doughnuts should be cool enough to handle, but still warm.
  9. Brush melted butter on each doughnut and dip it in cinnamon sugar to coat.
  10. Best served fresh.
