Churro Cheesecake Bars

The churro is a popular Mexican dessert, often eaten as a snack or at festivals and celebrations. You might describe churros as a stick-shaped, deep-fried pastry dough filled with cinnamon and sugar or a vanilla cream. Cheesecake is one of those rich, decadent desserts that you either love or hate. I’m definitely in the former camp and churro cheesecake bars seemed like the perfect way to bring these two unique desserts together.

Churro Cheesecake Bars are a quick and easy dessert recipe made with six simple ingredients you probably already have on hand. They are ready to serve warm in under an hour, but you could also chill these bars overnight and eat them cold. Try topping your slice with caramel sauce, strawberries, and whipped cream for an especially indulgent dessert!

How to Make Churro Cheesecake Bars

Step 1 – Grease a 9×9 baking dish. Then press half of the crescent roll dough into a flat layer on the bottom of the pan. Pinch together the seams (but don’t worry if it’s not perfect).

Step 2 – Use an electric mixer to beat together the cream cheese, part of the sugar, and the vanilla until smooth. Then spread the mixture over the layer of dough.

Step 3 – Unfold the remaining crescent roll dough, and place it in an even layer on top of the cheesecake filling. Pinch together the seams as well as you can. There will probably be a few gaps, and that’s ok.

Recipe Notes:

  • The churro mix is a bit sticky, so a small offset spatula would be best to use when smoothing churro cheesecake bar mix out into pan.
  • Churro cheesecake bars should be made and refrigerated at least 1 hour before cutting into churro cheesecake bars to give time for churro cheesecake bar mix to set. They may need additional cooling time after being removed from fridge if they were not fully set before putting in the fridge.
