Crunchy Ice Cream Topping: Brown Sugar Krispies RecipeABy Ashton · Updated October 22, 20265.02 reviewsJump to Recipe Save Pin Add to Google posted by Ashton on October 22, 2026 I’ve been digging through my family cookbook this year and making an effort to document some of the recipes I’ve tried here on the blog. Since Something Swanky is sort of a record of my life (you have to read in between the chocolate smeared lines a little) and the things that are important to me right now, it just feels right to include recipes here from the people who are most important to me. This one happens to turn into the best homemade crunchy ice cream topping I’ve ever made, so buckle up buddy ro, because we’re going there. And I like that it sort of gives me a connection to some of my family members that I don’t even know all that well. So far I’ve only really posted recipes from my mom and Grandma. But this cookbook has recipes from all sorts of cousins, aunts, and in-laws. It’s fun to think about bringing them all to life here! This recipe is another one of my Grandma’s (I’ve also posted her Monster Cookies and Red Velvet Cake). But I’ve tweaked it a little… actually I’ve just lazied it up a bit. See, what I’ve made here is an ice cream topping. My grandmother actually makes this into an ice cream bar. So, basically, you’d layer half of this sweet, crunchy stuff on the bottom of a pan. Then layer some softened vanilla ice cream, and then press on another layer of the topping, and freeze it solid again before cutting into bars. Frankly, I think it’s all superfluous. I say, just gimme a bowl and a spoon and let me go to town! Honestly, plain vanilla ice cream is the only way to really let this topping shine โ it’s like a blank canvas just waiting for all that buttery crunch. This topping is almost like a cross between granola and a rice krispie treat. Except there’s no oatmeal… or anything else remotely nutritionally sound. It’s butter, brown sugar, coconut, pecans, and krispies melted and stirred together to create an incredible caramel flavor. Then baked to make it crispy. It’s like this buttery, crunchy, brown sugar heaven on top of creamy, dreamy ice cream. Make a big batch of it to keep on hand for topping ice cream and yogurt. Or make ice cream bars, like my Grandma suggests. …or eat it with a spoon. Which is what I suggest. Why Homemade Ice Cream Toppings Beat Store-Bought Can we talk about ice cream toppings for a second? I feel like we’ve all been sleeping on just how easy it is to make your own. Sure, you can grab chocolate syrup or magic shell at the store, and honestly, those are great in their own right โ I’m not knocking a classic. But there’s something so satisfying about making homemade ice cream toppings from scratch in the convenience of your own home. No fast shipping required, no waiting on a distributor of the company to restock your favorite jar. You just melt, stir, bake, and boom โ you’ve got your own little food product that puts the store-bought stuff to shame. This brown sugar krispies topping is honestly my personal favorite because it’s got that perfect balance of sweet and crunchy, with the right amount of caramel flavor running through every bite. It reminds me a little of those viral tiktok – make videos where someone discovers a genius food hack and the whole internet loses it. This one deserves that kind of attention, I’m just saying. The Ultimate Crunchy Ice Cream Topping Lineup If you’re building out your own ultimate ice cream topping bar at home (which, yes, you should absolutely be doing), this brown sugar krispies mixture deserves a top spot right next to crushed potato chips, cookie crumbs, and a good caramel sauce. I know potato chips sound like a weird addition to an ice cream topping lineup, but trust me โ that salty-sweet combo is a game changer, kind of like my caramel potato chip fudge situation. Sweet, salty, crunchy โ it’s the trifecta. And speaking of crunchy, if you’ve ever had Krunch Kote ice cream topping from a local ice cream shop, you know exactly the texture I’m going for here. It’s that shatters-in-your-mouth, stays-crunchy-even-on-ice-cream magic that makes a sundae feel special. This homemade version takes care of your crunch coat cravings without you having to track down a licensed product at some specialty store. You just bake it up in your own kitchen, and it’s done. Chocolate Ice Cream Pairings That Just Work While this topping is basically a blank canvas for any kind of ice cream, I have to say it’s a little steep competition for chocolate chip and chocolate ice cream fans too. The caramel-y, nutty flavor pairs so beautifully with chocolate that it almost feels like cheating. If you’re a chocolate-first kind of person (no judgment, I respect it), try layering this topping with chocolate ice cream and a drizzle of chocolate syrup. It’s basically a sundae upgrade you didn’t know you needed. Honestly, this stuff might even give my frozen hot chocolate a run for its money in the “things I crave at 9pm” category. I also love adding a few spoonfuls on top of a slice of black forest ice cream cake roll for an extra crunchy, buttery finish. It sounds a little indulgent (okay, it IS indulgent), but that’s kind of the whole point of dessert, right? Storing, Shipping, And Sharing Your Crunchy Topping One thing I really love about this recipe is how well it keeps. Once it’s baked and cooled, just toss it into ziplocked bags and store it in your pantry or freezer. It stays crunchy for weeks, which makes it a great seller if you ever wanted to package some up as gifts for neighbors or teachers. Honestly, it costs about the cost of a stamp to mail a little bag of this stuff to a friend who lives far away, and they’ll think you’re a genius. Add some little stickers to the bag for a cute homemade touch, and you’ve got yourself a thoughtful, delicious peanut crumb-topped gift that took way less effort than it looks like. I also think this would make an amazing addition to a holiday dessert table โ right up there with all the cute treats in my Easy Christmas Desserts roundup. Just set out a bowl of it next to the ice cream scoop and let everyone build their own sundae. A Quick Word On Food Safety And Quality Since we’re talking about homemade food products here, it’s always worth mentioning food safety, especially if you’re planning on sharing or gifting this topping. Keep it stored properly, label it if you’re giving it away, and make sure whoever you’re sharing with doesn’t have any nut or coconut allergies (that pecan and coconut combo is amazing, but it’s definitely not for everyone). It’s kind of amusing to think that something homemade and humble could ever need the kind of oversight you’d associate with homeland security, but hey, a little common sense in the kitchen never hurt anybody. Honestly, that’s the beauty of making your own ice cream toppings instead of buying mystery food items from who-knows-where. You know exactly what’s going into it, and you control the quality from start to finish. Local Ice Cream Shops Vs. Your Own Kitchen I love a good trip to a local ice cream shop as much as the next person, but let’s be real โ some of those chain stores and local chain ice cream shops charge a little steep for toppings that honestly aren’t any better than what you can whip up yourself. Once you taste this brown sugar krispies topping, store-bought versions are going to feel kinda hard to justify buying again. Why pay more for delicious flavors you can recreate at home for a fraction of the price, with your favorite ingredient ratios exactly how you like them? Plus there’s something deeply satisfying about telling people “oh, I made this” when they ask where you got such an incredible crunchy topping. It never gets old. More Sweet Treats To Try Next If this brown sugar krispies topping has you in a dessert-making mood (it should), you might also love my Reese’s fudge with peanut butter cups or a slice of red velvet bundt cake with cream cheese frosting. Both are the kind of recipes that make people think you spent way more time in the kitchen than you actually did, which, let’s be honest, is the dream. Thanks so much again buddy ro for stopping by and reading all the way to the end of this one. I really do love sharing these old family recipes with you guys, and I hope this crunchy ice cream topping finds a permanent home in your freezer right next to the ice cream cakes and all your other favorite frozen treats. Go make a batch, grab a spoon, and enjoy! Don’t miss a bite!
