One Banana Bread Recipe

We’ve all been there before. You go to the grocery store and buy a bunch of bananas, planning to eat them throughout the week. But by the time Wednesday rolls around, there are only two left – and one of those is brown. What do you do with it? You could make banana bread! This ONE Banana Bread recipe is perfect for those times when you’re stuck with that one lonely, overripe banana on the counter. It’s quick, easy, and best of all – delicious!

The BEST Banana Bread Ever. Recipe

This banana bread is extra moist and extra delicious thanks to four whole bananas per loaf, brown sugar, and butter.

The best EVER banana bread on Something Swanky

Ok, you guys. I have to confess something.

I could have sworn I had already published this recipe.

Like…. truly. I’m not totally confident here that I didn’t post this just last week. I mean, I looked. But I’m kind of losing my mind these days, and I’m afraid I just sort of missed it.

So here’s the deal. If this is a repeat, can we all just agree to let it go? Look the other way and just pretend I didn’t already write this post?

I mean, I’m hoping I didn’t. But seriously, no promises.

Thanks gang.

Oh! That reminds me– speaking of losing my mind…

My Facebook page was majorly hacked today. And I am SO SORRY! They have been posting the most horrible spammy posts, and I’m so horrified that my wonderful readers are seeing this stuff pop up in their feed with my name attached to it ????.

I spent all day chasing down Facebook humans (they don’t really exist, by the way), trying to delete the nasty posts for as long as I had access to the page, and asking people to report the page as hacked. It feels like digging a tunnel with a spoon… or however that saying goes. You know what I mean.

Basically… it stinks. It’s been a crazy long day and nothing actually got fixed where Facebook is concerned.

So there’s that. Fingers crossed we get things all sorted out by tomorrow ????????.

Moving on.

You know what makes all the stupid Facebook hacker stuff go away? This banana bread.

Seriously. I’m making a batch tonight, because it’s the best food I could think of to adequately fill the void of a destroyed Facebook page that took 6 painstaking years of my life to fill with 200K followers and a gajillion dessert recipes.

Banana bread is the only thing that can help me at this point.

The best EVER banana bread on Something Swanky

And not just any banana bread. No, my friends. This is magic banana bread. THE BEST banana bread in the whole entire world ever.

That’s right. I said it.

It’s THE BEST.

Never, in all my years of banana bread eating, did I know that a piece of banana bread could actually melt in your mouth. Did you know that?! It can! THIS banana bread can. It has a moist, tender crumb that pairs with the crunch of walnuts in the most beautiful contrast of textures to have ever happened in a bread. In fact, I declare this bread to be so perfect that it doesn’t even need chocolate!

It is that good, folks.

If you’ve been searching for the perfect banana bread recipe– this is it folks. It doesn’t get better than this!

You know what I’d rather do than watch my husband try to do homework with my first grader? (because o.m.g. it’s like having TWO first graders who won’t stop arguing with each other)

So, yeah. Pretty much anything else would be good.

But eating this banana cake and licking that big puddle of chocolate glaze off the plate would be pretty high up on my list.

Two things really surprised me about this recipe. And not because one or the other, but because both things are going on here.

One. This cake is supremely soft and moist. Like, crumbs-that-stick-to-your-fork moist. Which I’d typically expect from a banana cake. Except for–

Two. It baked into a fabulously sturdy bundt cake. In my experience, bundt cakes that hold up really well aren’t always high up on the soft, fluffy, and moist scale. Maybe they’re moist. But never quite as tender and fluffy as this cake is on the inside.

Basically, this is the superhero of bundt cakes. And banana cakes. It’s the superhero of all cakes.

Also, that chocolate glaze. ????????

And want to hear my dirty little secret about that? It’s store bought frosting. YES. IT. IS.

Listen. I have really solid, fool proof, fantabulous chocolate ganache recipe right here that would work perfectly for this cake. And if you want to go the all homemade route, please! Be my guest!

But if you’re running short on time (who isn’t?), melting down about half of a can of Pillsbury Milk Chocolate frosting to pour over this cake is an excellent option. It tastes delicious, and it pours beautifully. Plus, it takes about 30 seconds and is virtually mess-free. You won’t be sad if that’s the way you go, I promise.

No matter how you slice it, it’s always better than watching my husband attempt homework with a first grader. ????

If you need me to convince you that peanut butter and Nutella and banana muffins are a match made in heaven.. then you are possibly on the wrong site. ????

People ask me all the time what I do with all the treats I bake. All.the.time.

I guess I should be flattered that people don’t take one look at me and think that I eat every single thing that comes out of my kitchen. But, oh, if they only knew how many of my baked goods never quite make it out the door to all the places I intend to send them.

Well, I’d be horrified. So I’m glad that they don’t know. But what I’m confessing is: I eat a lot of it myself.

Case in point: these muffins.

My mom's famous banana bread muffins made with peanut butter and swirled with Nutella. We didn't have a crumb left!

I took one bite, and I was gone. Or rather… the muffins were gone! ????

Super soft, moist banana bread bursting with peanut butter flavor and swirled with Nutella. A LOT of Nutella. So, so, so, good.

And so comforting! I don’t if it’s just me, but these are all flavors that just make me feel good and cozy on the inside. My mom’s banana bread always makes me feel that way. But adding the peanut butter and the Nutella added to that even just a little bit more.

Of course, OF COURSE, the key to any great banana bread recipe is to use incredibly ripe bananas (how to quickly ripen bananas). Like, almost rotten ripe. I mean, if they’re moldy and leaking… then no. Gross.

But soft and squishy and super brown– YES. Those are exactly the bananas we want in this recipe. Overripe bananas will add a tremendous amount of natural sweetener and moisture to any recipe. So we definitely want them in these.

My mom’s recipe that I’m basing this variation on typically calls for a little additional oil. But we’re going to skip that this time, since we’re adding peanut butter which will take care of the fat needed to help keep the bread soft. Plus, it tastes good ????.

My mom's famous banana bread muffins made with peanut butter and swirled with Nutella. We didn't have a crumb left!

When it comes time to swirl in the Nutella, I actually like to step a little outside of the box here. Instead of just adding the Nutella directly to the batter, I actually like to mix it INTO a portion of the batter, and then swirl the Nutella batter into the remaining batter.

Nutella batter = more Nutella taste = better.

These muffins are great warm out of the oven. But like all banana bread recipes, they’re even better at room temp. Something about cooling and sitting for a while really gives the flavors a chance to stand out!

Enjoy!

This bread is dangerously delicious. If you love peanut butter and chocolate (and banana bread!), then you are in the right place, friends.

…or the wrong place. Depending on your self control (er, or lack of, as the case may be ????).

This banana bread is dense and indulgent and bursting with some of the best flavors of all time ever: peanut butter, chocolate, and bananas. And Reese’s Cups. This bread is PACKED with Reese’s Cups.

Who’s on board?? ???????? ???????? ???????? ???????? ????????

If you’re the healthy sort, you should know that it’s packed with FOUR hefty bananas as well. So… you know. It’s basically health food. ????

The key to super moist banana bread? Really, really, REALLY ripe bananas. In fact, I usually let mine get even more brown than what you see in this picture. I let these guys sit on the counter for an additional few days before turning them into another drool-worthy banana bread creation (recipe coming soon guys!).

If you’re lucky, you can snag over-ripe bananas that are on their way out in some grocery stores for clearance pricing. Which is always the best thing ever.

Or, if you really can’t wait for bananas to ripen on their own, try this trick for ripe bananas in less than 30 minutes.

The other ingredient that contributes to INCREDIBLE moist bread in this recipe is the peanut butter. This banana bread is simply my mom’s recipe with an additional 1/2 cup of creamy peanut butter. So I left all the ingredients we normally use in her banana bread– which is moist already– and just added to that!

More good fat (PB) + 4 whole bananas = the most heavenly moist banana bread of all time.

Plus, this recipe is really super easy. It takes kind of a long time to bake, but the prep is a breeze (you don’t even need a mixer)! And all that time in the oven means your house is going to smell ah-mazing while it’s baking.

You’re gonna fall in love, I’m telling you.

We haven’t even talked about all the stuff inside the bread yet!!

Although, I guess there’s not all that much to say. There are A LOT of chocolate chips and Reese’s Cups in this bread. Like, a lot.

Annnnnnd that pretty much sums up that. ????

This Southern classic is banana bread and cupcake all rolled into one! A super moist banana cupcake with crushed pineapple, coconut, and pecans folded into the batter topped with an irresistibly dreamy cream cheese frosting.

You already know that I’m obsessed with Southern food, thanks to my Carolina roots. And these Hummingbird Cupcakes are nothing if not good and Southern ????.

…because the fried chicken leg is the obvious official emoji of the South, right? ????

Anyway. The point is, if you are looking for a sweet Southern treat that is perfect for spring and summer, look no further! Banana bread and cupcake rolled into one, these pretty cups are packed with sweet summer flavors and topped with a rich cream cheese frosting.

This Southern classic is banana bread and cupcake all rolled into one! A super moist banana cupcake with crushed pineapple, coconut, and pecans folded into the batter topped with an irresistibly dreamy cream cheese frosting.

Step one. You’ll need two overripe bananas, so that you get the maximum sweet banana flavor in your cupcakes. I’ve seen a lot of recipes that call for chopped bananas, but I can’t stand the texture of banana chunks in a cupcake. So in my recipe, we’re mashing the bananas and mixing them into a smooth batter.

Some other ingredients you’ll need:

  • crushed pineapple, with the juice
  • coconut
  • pecans

And, of course, make sure you have cream cheese for the frosting. It’s heavenly. ????

Each tender bite is bursting with the sunny flavors of banana, pineapple, and coconut. Cinnamon adds a bit of warmth to the mix, and the pecans add a perfect touch of crunch.

If you’re anything like me, you’ll feel like these ingredients shout SPRING ☀️ and SUMMER ???? and the arrival of beautiful warm days filled with blue skies.

The thick layer of cream cheese frosting is what elevates these from glorified muffins to glorious cupcakes! It’s my very favorite frosting recipe, because even though it’s rich and creamy, it’s somehow light and fluffy too. And it’s so easy to whip up, which is always a plus.
