We always have pancake mix on hand in our house. It’s cheap, it’s easy, and my kids will eat pancakes 100% of the time. I always prefer to make my waffles from scratch, but when it comes to pancakes these days– my philosophy is why fix what’s not broken? Pancakes from a mix are soft, fluffy, and completely reliable when it comes to taste and texture. But sometimes you want to switch things up and get a little fancy with breakfast. That’s where these Doctored Up Pancakes come in! With a minor tweak here and there, you can easily turn your pancake mix pancakes into so much more.

What type of pancake mix should you use?

The one I use the most often is from Walmart. It’s about $1.50 for a box, and that will cover several breakfasts for the kids and one or two “brinners” for the whole family. Whichever brand you buy, I’d recommend going with a mix that says “just add water,” just to be sure these recipes will result in pancakes like the ones I tested for this post.

Pumpkin Chocolate Chip Pancakes

Ingredients:

  • 1 cup pancake mix
  • 2/3 cup water
  • 1/3 cup pure pumpkin (not pie filling)
  • 1/2 tsp pumpkin pie spice (or a cinnamon + nutmeg combo)
  • 1/3 cup chocolate chips.

Directions:

Preheat a griddle to 350ºF.

Set aside the chocolate chips and whisk together all of the other ingredients. Add a little more water or a little more pancake mix if necessary to achieve your preferred consistency (these are the measurements for what I personally like best).

Fold in the chocolate chips.

Pour 1/4 cup of batter onto the buttered griddle for each pancake. Let cook for about one minute, until the edges start to look try and pocks form on the top. Flip and cook on the other side for about a minute.

Apple Cider Pancakes

Ingredients:
