My favorite part of this pie just might be that crust. It’s so simple (only 2 ingredients!), and it’s SO good. My second favorite part? The homemade whipped cream. And not just the dollops on top! My favorite homemade whipped cream is folded right into the filling โ€” it’s what makes this pie so creamy and smooth. And because it uses a stabilized whipped cream recipe, you don’t have to worry about it deflating and ruining the pie. Cool whip works in a pinch, but trust me, homemade is SO much better!

The oreo cookie crust is literally the best thing ever and so stupidly simple. Crush your Oreos in a food processor (or smash them in a zip bag โ€” no judgment!), then stir in melted butter. Press the mixture into your pan. You can use a springform pan lined with parchment paper for a more traditional cheesecake presentation, or just press it into a standard pie dish for the classic oreo pie crust vibe we’re going for here. Press it up the sides, pop it in the freezer while you make the filling, and you’re golden. ๐Ÿ™Œ This oreo crust is honestly SO much better than chocolate graham crackers, but those work great in a pinch too if you want different crusts for different occasions.

There are two steps to making the chocolate cheesecake filling. Step one: beat together the room temperature cream cheese, melted butter, vanilla extract, sugar, and melted chocolate in a large bowl using your stand mixer or hand mixer until totally smooth โ€” about 3-4 minutes.
