Diner Pancake Recipe for Fluffy Buttermilk PancakesABy Ashton · Updated August 17, 20264.516 reviews·Serves 5-6 pancakes (about 9 inches)Jump to Recipe Save Pin Add to Google posted by Ashton on August 17, 2026 Oh my goodness, you guys β if there is one thing I am absolutely, unabashedly obsessed with, it’s a great diner pancake recipe. Like, not just any pancakes. I’m talking giant, fluffy, porous, bigger-than-your-face pancakes that you’d find at your favorite local diner on a lazy weekend morning. The kind that make you feel like the best part of your day is already happening before 9 a.m. We make pancakes in this house constantly β it’s basically a Monday-through-Saturday situation (Sundays I get real wild and bust out… cereal π). Every single morning my daughter Emma asks for “pan-pakes, please,” and honestly? Every single morning I think ooooh yes, pancakes DO sound good. Same, Emma. Same. What Makes Diner-Style Pancakes Different For those of you who aren’t quite as… experienced… in the world of diner-style pancakes as I am, let me break it down! These are not your average weekday stack. Diner style pancakes are a whole vibe. First: they are massive pancakes β at least as big as your face, ideally bigger. Second, they’re generally on the thinner side, but still wildly fluffy. That tension between thin and fluffy is the magic! Third β and this is key β they are incredibly porous, which is maybe the same as fluffy, but it’s worth calling out separately because that diner-style texture allows them to soak up every last drop of maple syrup in a way that regular homemade pancakes just don’t. And finally, you HAVE to spread melted butter on top. You just do. Also? The soft, steamy exterior. That’s the diner secret β stacking them all up as they cook instead of serving immediately keeps them perfectly steamy-soft rather than giving you crispy edges. A little OCD? Maybe. Worth it? Absolutely. The Secret Ingredients for This Diner-Style Pancake Recipe Okay, let’s talk about what actually goes into a proper diner-style pancake recipe β because the simple ingredients you use make ALL the difference! First, real buttermilk. Please don’t skip this. This is a true buttermilk pancake recipe and you need real stuff for those fluffy buttermilk pancakes. Real buttermilk reacts with the leavening agents to create lift and that gorgeous tender crumb. Speaking of which β the secret ingredient in my recipe is a splash of bubbly seltzer or club soda! Yes, seriously. Cold seltzer water introduces air bubbles and tiny bubbles into the batter that make your pancakes insanely light. Some people even use malted milk powder for extra diner-style texture and best flavor β totally worth trying! You’ll also need large eggs, purpose flour, a bit of sugar, kosher salt, vegetable oil, and your wet ingredients mixed separately from your dry ingredients. Don’t overmix β dry streaks of flour are actually okay! Let the batter rest for a few minutes and watch those air bubbles do their thing. β¨ How to Cook Pancakes Like a Diner Pro Here’s where the magic really happens! To cook pancakes diner-style at home, you want a large griddle β ideally a large electric griddle β set to medium heat. A non-stick skillet or single large skillet works too if that’s what you’ve got. Make sure your pan is properly preheated so you get those gorgeous golden-brown pancakes with just the right color. Scoop Β½-cupfuls of batter onto your greased surface β this is how you get those giant pancakes that are totally iconic. A cup of batter per pancake gives you truly massive pancakes if you really want to go for it! Cook until you see bubbles forming across the uncooked top of each sizzling pancake, then flip once for a perfectly golden brown finish. Stack your cooked pancakes on a plate as you go β this keeps them steamy and soft, just like a diner heating tray would. If you’re cooking for a larger group, nonstick skillets on two burners simultaneously is the move, or use that large electric griddle and make them all at once! Pro tip: keep finished stacks warm in the f oven (200Β°F) on a rimmed baking sheet in a single layer. Fun Variations and Toppings One of the best parts of this easy homemade pancake recipe is how endlessly customizable it is! Sometimes we do chocolate chips folded into the pancake batter (my Brownie Batter Pancakes are basically the chocolate-lover’s dream version of this). Fresh blueberries are another obsession β hello, blueberry pancakes! Or just pile on the fresh berries and a homemade berry sauce or berry compote on top for serious festive brunch vibes. If you’re into peanut butter, go check out my PB&J Pancakes β SO good. For toppings, don’t sleep on a rich honey butter syrup or even a drizzle of maple syrup with fresh fruit on the side. And if you want something truly indulgent, this is honestly an ideal holiday breakfast idea β check out my full Holiday Breakfast Ultimate Guide for more inspo! Also β these work beautifully alongside my Caramel Buttermilk Syrup if you really want to go next-level. π Tips, Substitutions, and Storage Real talk β sometimes you don’t have everything on hand, and that’s okay! Here are the best buttermilk substitutes: plain yogurt, greek yogurt, or even cottage cheese thinned out a little all work in a pinch. You can also use a pancake mix as your base and doctor it up β I have a whole post on Doctored Up Pancake Mix 3 Ways if that’s more your speed, and it’s the easiest option on a busy morning! For oatmeal pancakes fans, my Cinnamon Oatmeal Blender Pancakes are a lighter riff you’ll love. An editor’s note on storage: leftover cooked pancakes keep beautifully in an airtight container in the fridge for up to 4 days, or freeze them flat on parchment paper-lined sheets then bag them up. Reheat in the toaster, a toaster oven, or a warm frying pan β they come back to life! And if this is your first time making copycat golden diner pancakes at home, I promise: this full recipe makes it completely foolproof. You are going to recreate that New York diner experience in the comfort of your own home and never look back. Now go make these fluffy pancakes β you HAVE to! π₯β€οΈ I have zero doubt that this best pancakes recipe is going to be a massive hit at your house. Whether it’s a regular old Thursday or a snowy weekend when you need a warm, cozy fluffy texture situation β this is THE one. The egg mixture, the egg whites beaten to perfection, the large bowl of gorgeous batter β it all comes together into something truly special. These are the best fluffy pancakes, they’re golden-brown, they’re diner-style, and they are made with real buttermilk and a splash of bubbly seltzer that changes everything. No stick pan, no smaller skillet, no sad flat pancakes β just big, dreamy, soak-up-the-syrup perfection. Enjoy!! π§β¨ >>On a side note β I couldn’t post a pancake recipe without giving a little shout out to my sweet and talented friend Karly (Buns in My Oven) whose PANCAKE COOKBOOK, Stack Happy, has just been released! It is incredible! Diner Style Pancakes Yield: 5-6 pancakes (about 9 inches) Save this recipe for later: Save Pin Add to Google These Diner Style Pancakes are as big as your face and pillow-soft too. Print Ingredients 1 3/4 cups milk 1/4 cup white vinegar 2 cups all purpose flour 4 tbsp white sugar 2 tsp baking powder 1 tsp baking soda 1 tsp salt 2 eggs 4 tbsp melted butter Instructions Preheat a 10-inch skillet on medium-low heat (I set mine at 3-4). This step is important, so don't skip it! In a small bowl, add the vinegar to the milk. Set aside while mixing other ingredients... In another, larger bowl, mix together the flour, sugar, baking powder, baking soda, and salt. Add the milk-vinegar mixture, eggs, and melted butter. Mix until smooth batter forms. Lightly grease the skillet with non-stick cooking spray. Pour about 1/2 cup of batter (I use a large soup ladle and pour 1 1/2 scoops) onto the skillet and lightly spread batter into a large circle that covers the entire skillet. Allow to cook for about 2-3 minutes until you see bubbles on top that do not pop and sink back down. Use a spatula to peek and make sure the underside is nicely golden brown. Use a large spatula to flip the pancake and cook on the other side. Repeat with all of the remaining batter.
For some reason, Β diner/restaurant pancakes just taste better. I am trying these this weekend! Reply
We LOVE pancakes too. It is not just a weekend food for us either. I like to make them with whole wheat, spelt, oatmeal, ground flax seed, chopped apples sometimes, cinnamon, and use buttermilk. I just made these yesterday. Ha!!! Β However, my grandkids have to have them with white flour. Β I thought I made big ones, but 9 inches is a whopper. HAHAHA!!! Reply
