Rainbow Cupcakes

I’m feeling so awful that I didn’t get step by step photos of these cupcakes!
However, they were super easy.
The trick is making sure to use the right food coloring: paste.
Williams-Sonoma has a line of food colorinng paste, and so does Americolor– which you can order online or pick up at your local Hobby Lobby.
Over the Rainbow Cupcakes:
  1. Mix together your favorite recipe for white cake. Divide batter evenly into 6 bowls.
  2. Mix in food coloring into each bowl of batter until you’ve reached desired colors.
  3. Line a muffin tin with baking cups. By the tablespoon, drop in one color in all the baking cups. 
  4. By the tablespoon, drop in the second color of batter, right on top of the first color. 
  5. Continue with each color until all the batter has been used up. DO NOT MIX.
  6. Bake according to direction in recipe. Let cool and frost with your favorite buttercream.

  2. I just posted about my rainbow cupcakes last night! I even tried to make rainbow icing but that didn’t turn out too well! LOL! Your pictures are fabulous!
