I’m feeling so awful that I didn’t get step by step photos of these cupcakes!
However, they were super easy.
The trick is making sure to use the right food coloring: paste.
Williams-Sonoma has a line of food colorinng paste, and so does Americolor– which you can order online or pick up at your local Hobby Lobby.
Over the Rainbow Cupcakes:
- Mix together your favorite recipe for white cake. Divide batter evenly into 6 bowls.
- Mix in food coloring into each bowl of batter until you’ve reached desired colors.
- Line a muffin tin with baking cups. By the tablespoon, drop in one color in all the baking cups.
- By the tablespoon, drop in the second color of batter, right on top of the first color.
- Continue with each color until all the batter has been used up. DO NOT MIX.
- Bake according to direction in recipe. Let cool and frost with your favorite buttercream.
Here are some other cute St. Patrick’s Day desserts I’ve found on other blogs…
{edit, one year later: my sincerest apologies! When I wrote this post, I was fairly new to blogging– and didn’t cite the original sources of these photos!
If they are yours, please let me know so I can add the links!}

cute, so how do you make them?
I just posted about my rainbow cupcakes last night! I even tried to make rainbow icing but that didn’t turn out too well! LOL! Your pictures are fabulous!
