Pumpkin Chocolate Chip Brookies

Pumpkin Chocolate Chip Brookies are a perfect combination of brownies and pumpkin chocolate chip cookies. No need to choose just one or the other!

I was going to try and wait until the end of August to start posting pumpkin recipes. Honestly, I was. But once I had this recipe on the brain, I was just way too excited to wait!

Obviously, the best part about “brookies” is that you don’t have to decide between making and eating a cookie or a brownie (who can?? It’s like Sophie’s choice!).

But the next best thing about brookies is how incredibly versatile they are. You could put oatmeal cookies or snickerdoodles or monster cookies (or maybe even these Reese’s Monster Cookies) on top of the brownies. You could even get a little crazy and put blondies on the bottom with chocolate cookies on top. The possible variations are endless, and that’s my very favorite kind of a recipe.

These brookies are a perfect cross between a lazy version of my favorite Pumpkin Chocolate Chip Cookie recipe and my favorite Fudgey Brownies. Both recipes are personal favorites as well as reader favorites, and for good reason! Together, they make the ultimate chocolate-y, pumpkin-y, perfectly fall-time (or any time) treat.

These are definitely going down in the books as one of my top favorite pumpkin recipes to date! I hope you enjoy these as much as we did :)

Pumpkin Chocolate Chip Brookies

Ingredients

    For the Brownie layer:
  • 1/4 cup butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 eggs
  • 1/4 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • For the Pumpkin Chocolate Chip Cookie layer:
  • 1/2 cup butter, room temp
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup pumpkin puree or pure pumpkin (not pumpkin pie filling)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 cups flour
  • 1 cup milk chocolate chips (I LOVE Guittard)

Instructions

  1. Preheat oven to 350ºF. Grease a 9x13 baking dish and set aside.
  2. For the brownie layer:
  3. Mix the butter, sugar, and vanilla together in a large bowl. Mix in the egg.
  4. Mix in the flour, cocoa powder, baking soda, and salt until a thick batter forms. Spread the batter in the bottom of the baking dish. Don't worry if you can't spread it all the way to the edges.
  5. For the pumpkin chocolate chip cookie layer:
  6. Mix the butter, sugar, brown sugar, pumpkin puree, pumpkin pie spice, and vanilla in a large bowl.
  7. Mix in the salt, baking soda, and flour until dough forms. Mix in the chocolate chips. Scoop out balls of dough and place them evenly across the brownie batter. Use a rubber spatula to press them down and spread the dough out a little.
  8. Bake for 30-35 minutes, until a toothpick inserted comes out clean. Delicious served warm, best completely cooled (for the most pumpkin flavor). Store in an airtight container for 3-4 days.

    I love this dessert combo! Two-for-one! I love the idea of a fudgy brownie base with the pumpkin cookie layer on top. Pinned!

    Hi Ashton! I will try it this weekend. I was just wondering if others have tried it. I just like to hear several opinions about recipes. Sometimes it gets to me when someone posts a great looking recipe and 15 people say, ” sounds great!”. Thanks for your comment, tho!!!
