Supplies Needed for Pumpkin Pancakes

  • an electric griddle – you could do this on a stove top, but I have the best results (by far) with any pancake recipe when I use an electric griddle. The heat is more evenly distributed throughout a griddle, and that makes all the difference in the world!
  • a 56mm scoop (1/4 cup) – it’s the perfect pancake size.
  • the baking essentials: mixing bowl, whisk, rubber spatula.

Instructions

This is super easy. First mix together the dry ingredients. Then, in another a bowl, whisk together the egg, oil, pumpkin, vanilla, and milk. Combine with the dry ingredients, mixing until just blended (lumps are okay). Pour 1/4 cup of batter onto a buttered griddle for each pancake, cooking for about one minute per side, or until edges look dry and bubbles form on top. 

To truly savor your pumpkin pancakes, serve them warm, drizzled with rich maple syrup and topped with a dollop of whipped cream. The warm spices and pumpkin flavor make these pancakes perfect for cozy autumn mornings or festive holiday breakfasts. Ingredients

  • 1 ¼ cup all purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 2 tsp pumpkin pie spice
  • ½ tsp salt
  • 1/3 cup pumpkin (NOT pumpkin pie filling)
  • 1 cup milk
  • 2 tbsp vegetable oil
  • 1 tsp vanilla
  • 1 large egg

Instructions

Preheat a griddle to 350ºF.

Mix together the flour, sugar, baking powder, and salt. Set aside.

In another bowl, whisk together the egg, oil, pumpkin, vanilla, and milk. Pour the wet ingredients into the dry ingredients, and whisk just until batter forms (there may still be some lumps).

Pour 1/4 cup of batter onto a buttered griddle for each pancake. Let cook for about one minute, until the edges start to look try and pocks form on the top. Flip and cook on the other side for about a minute.

Serve warm with maple syrup and whipped cream.
