Hot Fudge Sundae Cucpakes

I think I’ve decided, since becoming a mom, being alone at home is pretty much one of the coolest feelings ever. It’s funny how much it makes me feel like I’m a teenager again.
It’s like when I used to baby sit for people, after their kids were in bed and I was all alone in the house– I’d stuff my face with all the good food, prop my feet up on the coffee table, and watch TV to my little heart’s content. 
(Note: If I ever babysat for you, I so did not do this at your house. Just the other folks’. But not yours.)
I kind of had that same rush this morning when my husband took my daughter to the pool for the morning.  The moment they walked out the door, I excitedly rushed over to the pantry like I only had this small window of time to eat every bit of junk food we keep on hand!
It was funny to stop and think, “hey! I’m totally a grown up now. I buy this food. I have constant access to this food.”
And so I did the grown up, responsible thing: I reminded myself that I don’t need to eat junk food and walked away from the pantry…
…and over to the freezer to polish off the Monster Cookie Dough Ice Cream. Yes, I did.
Want to ditch being a responsible grown up? How about Hot Fudge Sundae Cupcakes? Guaranteed to bring out the kid in you. Because who wants to be a grown-up  when there are sprinkles involved??
These cupcakes are totally favorites of mine.
Because for all their bells and whistles with the hot fudge, sprinkles, and a “cherry” on top– it’s also one of my favorite tasting treats. You can’t go wrong with chocolate cake, buttercream, and ganache.

Hot Fudge Sundae Cupcakes

Ingredients

    For the Cake:

    • 1 box devil’s food cake mix
    • 1 small pkg instant chocolate pudding mix
    • 1 cup sour cream
    • 1 cup vegetable oil
    • 4 eggs
    • 1/2 cup chocolate milk (the good kind)
    • 1 tsp vanilla
    • 2 cups semi-sweet chocolate chips

    For the Buttercream:

    • 1/2 c. butter, room temperature or margarine
    • 1/2 c. shortening
    • 4 c. powdered sugar
    • 1 tsp. vanilla
    • 2-3 tbsp. milk

    For the Hot Fudge:

    • 1 cup semi-sweet chocolate chips
    • approximately 1 cup heavy whipping cream (don’t measure it out)

    Toppings:

    • Red Pretzel M&Ms for the Cherries
    • Sprinkles
    Instructions

    For the Cake:

    1. Mix all ingredients until smooth batter forms, reserving the chocolate chips.
    2. Mix in the chocolate chips with spatula.
    3. Divide evenly among 24 cupcake liners. Bake at 350º for 20-25 minutes until toothpick inserted comes out clean.
    4. Let cool before frosting.

    For the Buttercream:

    1. Whisk together the shortening and butter or margarine until smooth.
    2. Alternately add the powdered sugar, one cup at a time, and the liquids– whisking in between additions until smooth.

    For the Hot Fudge:

    1. Place the chocolate chips in a microwave safe bowl.
    2. Pour in the whipping cream until just barely level with the chocolate chips– you should still be able to see the chocolate chips.
    3. Microwave for 60 seconds.
    4. Whisk for 1-2 minutes until smooth and thick. It will continue to thicken as it cools.

    Assembly:

    1. Use a 1M tip to pipe buttercream on the cupcakes.
    2. Spoon the chocolate over top each cupcake.
    3. Top with an M&M and sprinkles.
