I have these two friends, Harry and David.
We're not really as close as I'd like to be.
There's the issue of money, of course. It costs a pretty penny to be much in company with those guys.
And they're pretty high-falutin' and fancy. Which I'm really not.
Frankly, they're just a little too high maintenance for a gal like me to keep up with.
But I still crave their company.
Frequently.
In the form of Moose Munch.
Mmmmmmmmmm.
So I've put together my own recipe, and I think it's better! But, please, don't tell the boys. I'd hate to hurt anyone's feelings. :)
Please take note: I had all these wonderful plans to include M&Ms and almonds (or almond M&Ms!) and maybe a white chocolate drizzle (so many options!). But I got totally impatient and decided to go ahead and make this before my trip to the store. Just sayin'...
{DIY} Moose Munch
Recipe inspired by: Shanna Keaton
Ingredients:
- 6 tbsp. butter
- 3 tbsp. corn syrup
- 3/4 c. brown sugar
- 1/4 tsp. vanilla
- 1/4 tsp. baking soda
- 1 1/2 - 2 bags popped popcorn
- chocolate chips, nuts, M&Ms, etc. to taste
- Preheat oven to 300ยบ.
- Remove all unpopped kernels from popcorn and pour popcorn into a bowl.
- Meanwhile: Combine butter, corn syrup, and brown sugar over medium heat. Cook and stir until mixture boils. Continue boiling at a stead rate for 4 minutes without stirring.
- Remove from heat and stir in baking soda and vanilla.
- Pour caramel over popcorn and stir to coat.
- Spread onto greased cookie sheet, and bake for 10-15 minutes (10 for chewy, 15 for crunchy).
- Remove from oven and add toppings. Let cool briefly before returning to bowl. (Or you can let it cool completely if you don't want the chocolate to smudge... but where's the fun in that??)
PS- I bought the popcorn containers at Target for $1!!

ReplyDeleteJust found your blog and love the look of this recipe! Is there a good substitute for corn syrup?
ReplyDelete@AvitalYes! We actually just had to use a substitute last time we made it. It's just equal parts of water and sugar. It won't be as glossy, but it works. Just mix them together in a cup or bowl and let the sugar dissolve as much as it can. The longer it sits, the more like corn syrup it looks.

ReplyDeleteLINKING UP TO U ON MY BLOG TODAY-THIS RECIPE ROCKS! THANKS! XOXO
ReplyDeleteThanks so much for the recipe! I love Moose Munch :) I added a link to this post on my blog too.
ReplyDeleteDo you know how long this will stay good for?
ReplyDelete@Nicole At the risk of completely grossing you out-- my roommates and I made this when we were in college. We put the leftovers in a ziplock bag and someone ended up throwing it on top of the fridge. Months later, we re-discovered it and ate it (I know, I know...) and it tasted just fine. Now, I don't think I'd recommend doing THAT, but I think I can safely say as long as it's in a sealed bag, it can last for a little while...
ReplyDeleteAnd I think you should make it a little crispier (which would be baking it about 1-2 minutes longer) if you want to store it for any amount of time.
Hope that helps. ...and that you don't think I'm super gross!
I featured this on my site :)
