I was barely able to keep enough around for pictures! …although, if I’m being totally honest– a major participant in the devouring of the Toffee Doodles was me. I’d say to myself “Ok, really, I only need a few for pictures…” and then I’d eat a handful. And, of course, my husband would take that as his green light and grab a handful. And it just spiraled from there. The good news is: enough of the cookies survived for picture taking, and I’ve got the recipe ready to share! They’re a spin off of the Black Bottom Toffee Doodle Cookie Football from a couple of months ago? Remember that? And, of course, those were actually a spin off of Craver’s Black Bottom Toffee Doodle Cookies. And those are incredible cookies. The white chocolate version is no let down. Cinnamon Sugar and White Chocolate is one of my top favorite flavor combos– you’re going to LOVE these! White Chocolate Toffee Doodles: Recipe modified from: BHG Biggest Book of Cookies Ingredients: 1/2 c. butter 1/2 c. shortening 1 c. packed brown sugar 1/2 c. sugar 1/2 tsp. baking soda 2 eggs 1 tsp. vanilla 2 1/2 c. AP flour 3 tsp. cinnamon 1 c. Toffee Chunks 1 c. White Chocolate Chips (I used Wilton’s Melting Discs) Directions: Cream together butter, shortening, brown sugar, sugar, and cinnamon. Add eggs, vanilla, and baking soda. Mix together. Gradually add in flour and continue to mix. Add toffee chunks and white chocolate chips. Bake at 375º for 9 minutes.
