St. Patrick’s Day is one of those holidays that I don’t feel the need to go ALL OUT for, but it’s always fun to do a little something festive for the kids. Which basically translates to something green with sprinkles for breakfast. amiright? Cinnamon Rolls are our go-to celebratory breakfast, so I decided to kick them up a notch for St. Patty’s 2017 and make them green! Well… frosted in green at least. With lots of rainbow sprinkles. Because what is a St. Patrick’s Day breakfast without rainbow sprinkles?! Not a bad way to start the day if you ask me. You could really use any cinnamon roll recipe you want here. The fun comes in adding the sprinkles and GREEN frosting! Try using my Chocolate Chip Cinnamon Rolls recipe for melt-in-your-mouth goodness. Or, if you’re looking for quick and easy, use the recipe in today’s post! I’m adapting my beloved Quick Bread Dough for cinnamon rolls. The important difference this recipe is the sprinkles and the frosting. I used Pillsbury’s Vibrant Green Funfetti Vanilla Frosting (I LOVE their line of colored frosting– so bright!). You can find it at Walmart or Target, and I’m sure at plenty of other supermarkets. The colors are just so pretty. Print Ingredients 1 tbsp active dry yeast 1 cup warm water (think warm bath water) 1 tbsp sugar 1 tsp salt 2 tbsp canola oil 2 1/2 cups flour 3/4 cup brown sugar 1 tbsp cinnamon 1/4 cup butter, softened rainbow sprinkles and green frosting Instructions Preheat oven to 350ºF. Pour the water into the bowl of a stand mixer with a dough hook. Sprinkle the yeast and the sugar over top. Let the mixture sit for about 5 minutes, until the yeast is foamy. Add the oil, salt, and 2 cups of the flour. Mix on medium-high speed until dough forms. Gradually add up to another 1/2 cup of flour, until the dough pulls from the sides of the bowl. Cover and let rest for about 10 minutes. Mix together the brown sugar and cinnamon. Set aside. On a floured surface, roll out the dough into a rectangle that is between 1/4"-1/2" in thickness. Spread the softened butter evenly over the dough. Sprinkle the cinnamon brown sugar over the butter. Sprinkle the rainbow sprinkles over the brown sugar mixture and roll up the dough starting at the long side. Cut the dough into 8 slices and layer them in a greased 8-inch baking dish. Bake for 22-23 minutes, until tops are just beginning to turn golden brown. Top with the green frosting and more sprinkles!
