Peanut Butter S’mores Granola Bars

I can’t get enough of this Peanut Butter Granola in my life. So I’ve added two of my favorite ingredients (marshmallow and chocolate chips) and turned my favorite breakfast granola into a yummy bar, making it perfect for back-to-school breakfasts, lunches, and snacks.

From the looks of Instagram, it’s back to school time! We still have a few weeks to go before it’s that time for us around here, but I thought it might be a good time to go ahead and post a yummy school time treat for all of you who are already packing lunch boxes!

I love the simplicity of this recipe. There are only 3 main ingredients plus the marshmallows and chocolate chips (but you could really leave those out or even substitute any other of your favorite ingredients like M&Ms or cranberries)!

I’ve also taken to breaking them apart and eating them in my yogurt like this for breakfast. So. good.

But no matter how you end up eating them, they’re easy to make, use simple and wholesome ingredients, and make an excellent snack at home or on the go!

Peanut Butter S’mores Granola Bars

Ingredients

  • 1/2 cup peanut butter (I like chunky)
  • 1/2 cup honey
  • 2 cups old fashioned oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup Jet-Puffed Marshmallow Bits

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add the peanut butter and honey to a large microwave safe bowl. Heat on medium power for 1 minute. Whisk until smooth.
  3. Add the oatmeal to the bowl, and mix well.
  4. Add the chocolate chips and marshmallow bits, and mix gently using a large rubber spatula.
  5. Line an 8x8 dish with parchment paper. Pour the peanut butter-oatmeal mixture into the dish and press down well using the rubber spatula.
  6. Bake for 15 minutes. Let cool completely before cutting into 12 rectangles. (I just bake mine before bed and let them cool overnight).
  7. Tightly wrap individual bars in plastic wrap immediately after cutting. Store for up to 3 weeks in an airtight container.
