Better Than Thin Mints… Grasshopper Poke Cake Recipe

This Better Than Thin Mints… Grasshopper Poke Cake recipe is seriously so good. It’s a layer of moist chocolate cake, covered in hot fudge sauce mixed with Thin Mint crumbs, mint whipped topping, and Andes Mint chips.

When I was younger, I desperately wanted a sister. But my mom kept cranking out baby boy after baby boy. Frankly, after the fourth baby brother, I’d really had my fill of tonka trucks and fire fighters. I mean, really. I was so over the boy thing.

At long last, 11 years after I was born, my mom finally had a baby girl, giving me a sister. Which was neat. I was happy and all. But what in the heck was I supposed to do with sister 11 years younger than me? We couldn’t talk about boys. She couldn’t do my hair. We wouldn’t be up in the night sharing secrets. We certainly wouldn’t be fighting over the bathroom or sharing makeup.

So I satisfied myself with dressing her up like a doll, getting lots of cuddles, and thoroughly immersing her in the world of Disney princesses.

So what happened next?

And then the craziest thing happened…

She started to grow up! And somewhere in there, I think I might have stopped growing up. And the gap between us became smaller and smaller. The funny thing is, we still don’t do those stereotypical things I thought sisters should do– you know, the make up, talking about boys, etc…

But we have a blast baking together. Our favorite thing to talk about is the latest on Pinterest. She roams the blog world with me, and is familiar with the names and blogs of all my blogging friends. She’s tried (unsuccessfully) to teach me how to french braid my own hair about a dozen times. I helped her get into running, but she’s already blown way past me (we’ll chock that up to youth)! She’s the kindest person I’ve ever met, totally without guile. She’s funny and beautiful too. And even with an 11 year age difference, she’s my best friend. Funny how that worked out, isn’t it?

Her 16th birthday was in March, and she asked for a Grasshopper cake. Given my affinity for poke cakes, we decided to make it a Grasshopper Poke Cake Birthday cake! It. is. diviiiiiiiiiiiine.

PRO TIP: Sprinkle with fresh mint or one of our recommended mint substitutes.

Better Than Thin Mints... Grasshopper Poke Cake

Ingredients

  • 1 chocolate cake mix + water, oil, eggs as listed on the box
  • 1 - 14.5 oz can sweetened condensed milk
  • 1 - 12.8 oz jar Hershey's Special Hot Fudge Sauce
  • 1 - 10 oz package Keebler Fudge Mint Cookies (or Thin Mints, when in season)
  • 1 - 16 oz container cool whip (I like lite)
  • 1 Duncan Hines Mint flavor packet
  • 1 cup Andes Mint chips

Instructions

  1. Prepare and bake the cake mix in a 9x13 baking dish. Allow to cool completely.
  2. Use the bottom of a wooden spoon to poke holes evenly across the entire cake (about 20 holes). Pour the can of sweetened condensed milk over the cake, trying to fill the holes.
  3. Heat the hot fudge sauce in a small bowl in the microwave. 30-40 seconds should do the trick, you jut want it to soften a little.
  4. Crumble half of the fudge mint cookies into the hot fudge sauce and mix. Spread the cookie/fudge sauce over the cake.
  5. In a large bowl, whisk together the mint packet and the cool whip. Spread the whipped topping over the fudge layer.
  6. Crumble the remaining cookie crumbs over top of the cool whip. Sprinkle the Andes Mint chips over top.
  7. Refrigerate and chill for at least 4 hours (overnight is best).
  8. Cut and serve. Serves 12-15.

  1. This sounds DELISH! I never make box cakes, so I am not familiar with the Duncan Hines Mint flavor packet……is that sold separately, or is it part of a cake mix???

  2. I am the youngest of 3 sisters, by 10 and 8 years. We never did girly things either. And despite the gap, we feel very close in age. Love having a sister! I am confident that either of my sisters would be over the moon if I made them this cake!

    • Duncan Hines has a new-ish product line (it’s been out for about a year or a little more I think) of flavor add-ins for frosting! You should see a small section by the DH frostings in your store with little flavor packets– they’re about the size of yeast envelopes.

    • Does anyone know, the fudge sauce, is it special dark fudge or just regular fudge? And this says a 16 oz tub of cool whip, a normal tub is 8 oz, so this is calling for 2 regular or 1 large, correct?

  3. Aww, how nice about you and your sister! My brother is only 7 years older than me but we don’t have anything like you and your sister have going on. Oh well.

But it’s cool because there’s cake. And a minty cake at that! It looks incredible. 🙂

  6. This looks amazing!! I have to admit I am one of the few people I know who is not a fan of cool whip. Do you think this would work with real whipped cream?

    Thanks!!

  7. I am in the middle of making this cake, so I can’t give my opinion yet. But I have no idea what could be bad about it!! My comment is about your sister!! I am the oldest of 9 siblings!! My sister is 11 years younger then me too! This made me think of her! Us girls are drowning the sea of 7 brothers!! While we are complete opposites, I try to learn from her no nonsense attitude and am only slightly jealous of her crazy social life!! I admire her strength and her strong faith! Here’s to sister to late for dress up but not too late to be friends!

  11. Can you eliminate the sweetened cond. milk? Pour the fudge sauce into the holes instead. Seems way too sweet for me…..
Also would seem to make the cake so dense instead of light.
    thanks

  12. I love this recipe and I want to make it for my sister’s baby shower. Do yoy have any suggestions how I could possibly make this into a cupcake? I was thinking making the cake part as a cupcake and then piping the topping and sprinkling the topping over it. Any suggestions?

  13. Okay, I read the comments explaining about the Duncan Hines mint flavor packets. However, just in case my grocery stores don’t have it… would mint extract/flavoring suffice instead? Anyone had any experience with trying this substitution?

  14. Sounds great! I tried the Peppermint one @ Christmas time. Mine always seem a little soupy, any thoughts on what I might have done wrong?

    • Just add a little less liquid (SCM) to the cake than the recipe calls for 🙂 Although, FYI, the Christmas one has a little more liquid in the first place since it also calls for creamer!

  15. Would it be possible for me to make this in two 8×8 pans instead of a 13×9? I’m thinking of making it for Easter but a 13×9 won’t get eaten at my mom’s or my mother in law’s, but an 8×8 for each most likely would. I hate always taking cookies or bars so that I have some for each place.

P.S. My sister and I are ten years apart so I know what you mean! She is 14 now so our relationship has gotten closer the past year or so.
