What kind of a banana person are you? My husband likes them still green. Which completely grosses me out. I like mine a little bit speckled and sweet, but still firm.

Actually, what I really like is when they’re about 3 days past their prime and turning perfectly brown and ready for baking something sweet 🙂

Like this Banana Streusel Bread. It’s a tweak on my very favorite, super moist banana bread recipe. I used all brown sugar to really up the moist factor, and I added a coffee cake-like streusel on top. And a little vanilla glaze drizzle to make it taste like you’re biting into a giant cinnamon roll.

But better. Because it has bananas. Which makes it healthy ????.

Streusel Banana Bread

Yield: 2 loaves

Cook Time: 45 minutes

Ingredients

  • 4 medium, overripe bananas
  • 1 egg
  • 3/4 c. brown sugar
  • 1 teaspoon vanilla
  • 1/4 c. vegetable oil
  • 1 1/2 cups all purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt

For the streusel topping:

  • 1/3 cup butter, softened
  • 1 cup brown sugar
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups oats
  •  

Instructions

Preheat oven to 350 degrees F. Prepare to loaf pans lined with parchment and lightly sprayed with nonstick cooking spray.

Mash the bananas with a fork until mostly smooth.

Mix in the egg, sugar, vanilla, and oil. Mix well.

In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Fold the dry ingredients into the wet until batter forms.

Pour batter into the two prepared loaf pans.

Make the streusel topping: mix together the flour, brown sugar, and oats. Cut in the softened butter using a fork. Sprinkle streusel over the batter.

Bake for 35-45 minutes, or until toothpick inserted comes out clean.

Optional: make a simple glaze using powdered sugar and milk to drizzle over the bread.
