Quick and Easy Homemade Granola

Up until now, the only granola I’ve ever made is this Chewy Peanut Butter Granola. Well, and it’s cousin, Monster Cookie Granola.

I’ve just never seen a need for any other kind of granola (if you’ve tried those, you know what I mean).

But lately, I’ve been finding myself pulled towards something that’s a little more sticky and sweet and not quite so peanut butter. I wanted crunchy and chewy, something I could eat like cereal or as a yogurt topping or just for munching right out of the bowl.

Oh, and I didn’t want to wait an hour for it to bake. That was a biggie for me.

Enter: this quick and easy granola.

The great thing about homemade granola is that you can add anything you’d like to it– dried fruit, chocolate, coconut, whatever! However I only wanted 3 simple flavors in my granola: honey, almonds, and vanilla. So that’s basically all you’ll find in this recipe.

But feel free to add your own flair (aka: chocolate).

I tried a couple of different recipes before landing on this one, because I wanted to find one with just the right texture. Not dry, and not too soft or sticky.

This one is just right. The honey and oats contribute a nice chewy texture, while the almonds add a perfect crunch. You can eat it with a in a bowl with a spoon and milk, or you can sprinkle it over yogurt and ice cream. Or grab it by the handful like I’ve been doing all day. ????

The BEST part of this granola? It’s ready in at least HALF the time I’ve seen in other recipes. Just a quick mix up in the bowl, and then 20 (JUST 20!!!) minutes in the oven.

I started munching on it warm, fresh out of the oven (and oh my gosh, it makes the whole house smell so good!). But if you can muster the patience, it gets crunchier and chewier as it cools.

Quick & Easy Vanilla Almond Granola Recipe

Yield: 8 SERVINGS

Sweet and chewy granola bursting with vanilla flavor and crunchy almonds! And so easy to make. This granola is delicious fresh out of the oven in just 20 minutes.

Ingredients

  • 1/3 cup coconut oil or butter
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1 tbsp vanilla extract
  • 3 1/2 cups old fashioned oats
  • 3/4 cup sliced almonds

Instructions

    1. Preheat oven to 350ºF.
    2. Melt the coconut oil and combine it with the honey, brown sugar, and vanilla.
    3. Mix in the oats and almonds.
    4. Lightly grease a 9x13 baking dish. Spread the granola mixture evenly in the dish. Bake for 20 minutes, stirring halfway.
    5. Let cool completely before storing.
