Hey guys, it’s me Emily and today I’m sharing a treat perfect for the long lazy days of summer. These chewy, peanut butter oatmeal cookie bars are packed full of miniature M&M’s, chocolate chips and crispy rice cereal; they are sure to be a hit with the snack time crowd.

I topped them with a delicious peanut butter drizzle which takes them from good to amazing! Because the only thing better than a loaded peanut butter cookie bar, is one with extra peanut butter on top, am I right? I hope you’ll enjoy these cookie bars as much as my friends and family do, enjoy and happy baking!

Chewy oatmeal peanut butter Monster Cookie Bars are loaded with crispy rice cereal, miniature chocolate chips and M&M's.


for the bars:

8 Tbs butter

2 Tbs shortening

1/2 c peanut butter

1/2 c brown sugar, packed

1/2 c sugar

2 eggs

1 tsp vanilla extract

2 c flour

1 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 1/2 c oats

3/4 c crispy rice cereal

1/2 c miniature chocolate chips

1/2 c miniature M&M candies

for the peanut butter drizzle:

2 Tbs peanut butter

2 Tbs confectioners sugar

1/2 tsp coconut oil


Preheat your oven to 375º F and line a 9"x9" baking pan with foil, set aside. In a mixing bowl or your stand mixer, beat together the butter, shortening, peanut butter and sugars until fluffy, about 1 minute. Beat in the egg and vanilla until smooth. Sift together the flour, baking powder, baking soda and salt, stir the flour mixture, and oats into the butter mixture. Using a wooden spoon gently stir in the crispy rice cereal, miniature chocolate chips and miniature M&M candies. Press the mixture evenly into the prepared baking pan and bake for 23-25 minutes, until lightly golden. Let cool in the pan 5 minutes, then using the edges of the foil lift the bars out and let cool on the counter to room temperature. To a small bowl add the peanut butter, confectioners sugar and coconut oil, microwave for 30 seconds, stir until smooth. Once the bars have cooled drizzle the peanut butter mixture over the top of the bars, slice and serve. Store leftover bars at room temperature for up to 3 days.
