When I posted this Weight Watchers Freestyle 1 Point Cheesecake a couple of weeks ago, I was really nervous about how you guys would react. The response I got on Facebook and Instagram was pretty lukewarm, if I’m being honest. But my friends on Pinterest are pinning it like WHOA. So I’m going to take that as a green light to go ahead and post another WW friendly cheesecake recipe.

These little cups are ZERO points. As in NADA. That’s right! Or…. you could eat FIVE (✋????) and count it as one point. YUP! Just be sure you tabulate additional point-age for any toppings you add on!

Ingredients for Weight Watchers Freestyle Zero Point Mini Cheesecakes

  • 3 cups plain nonfat Greek yogurt
  • 3 eggs
  • small box of sugar free fat free pudding mix, cheesecake flavor
  • 3 tbsp Splenda (or your favorite sweetener)
  • 1 tbsp vanilla extract

Toppings That Don’t Break the (Points) Bank

  • sugar free caramel syrup
  • chocolate syrup
  • cookie thins (one cookie crumbled can top several mini cheesecakes)
  • fat free whipped cream
  • strawberries
  • thinly sliced mini candy bars
  • fruit

Tips for Making Weight Watchers Freestyle Zero Point Mini Cheesecakes

  • Store these in the refrigerator without any toppings on. That way you can custom make each one when you want toppings, OR you can quickly pop one (or more) plain cheesecakes in your mouth without worrying about tallying up points!
  • One of the easiest ways to calculate nutrition for the small amount of toppings on each cheesecake is simply to place your cheesecake on a food scale, zero it out, and then measure the toppings by weight.

Ingredients

  • 3 cups plain nonfat Greek yogurt
  • 3 eggs
  • small box of sugar free fat free pudding mix, cheesecake flavor

Instructions

  1. Preheat oven to 350ºF. Line a muffin tin with cupcake liners. Lightly spray with nonstick cooking spray.
  2. Whisk together all ingredients.
  3. Divide batter evenly between the cupcake liners . Bake for 30 minutes.
  4. Cool completely at room temperature and then keep chilled.
