What is Strawberry Shortcake Crumble?

When it comes to the perfect dessert, nothing quite beats the sweet and crunchy goodness of a strawberry shortcake crumble. It’s a unique dessert that combines the best of both worlds – the fluffy shortcake with the crunchy crumble. It’s a dessert that screams summer, strawberry season, and brings back memories of Good Humor’s strawberry shortcake ice cream bars.

Yes, you heard it right! The same strawberry crunch crumbles that you loved on the outside of the ice cream bar are now the star of this dessert recipe.

Base Layer: White Cake

Let’s start with the base of our strawberry shortcake crumble recipe. You can use a white vanilla cake (like our Vanilla Crazy Cake) or a simple white cake mix from your local grocery store. The cake adds a soft and moist layer, which beautifully contrasts with our crunchy crumble topping. It’s like having a slice of birthday cake and the best part of the strawberry shortcake bars all in one bite.

How about a vibrant red velvet batter that makes fluffy, delicious, beautiful pancakes?

Creating the Strawberry Crunch Crumbles

Now, let’s move on to the star of the show – the strawberry crunch crumbles. These small crumbles are what make our strawberry shortcake crumble so special. You can make them using simple ingredients such as golden oreos, freeze-dried strawberries, and unsalted butter (or our recommended substitutes for unsalted butter). A food processor can easily blend these into the perfect consistency for our strawberry crunch recipe. If you don’t have a food processor, don’t worry! A rolling pin and a ziplock bag can do the job just as well.

The Secret Ingredient: Strawberry Jell-O

The secret ingredient that takes our strawberry shortcake crunch to the next level is strawberry jello. The strawberry jello powder not only provides added sweetness to the strawberry crunch crumble but also enhances the fruity strawberry crunch. It’s an easy recipe that even a beginner baker can master!

Adding Some Extra Crunch: Golden Oreo Cookies

Want to add an extra crunch to your strawberry shortcake crumble? Use golden Oreo cookies! They are a favorite way to elevate the crunchy crumble. They add a wonderful texture and a hint of vanilla that complements the sweet strawberry flavor perfectly.

Baking the Strawberry Crunch Topping

Once the dry ingredients are well combined, it’s time to bake our strawberry crunch topping. Spread the mixture on a baking sheet lined with parchment paper and bake until golden and crispy. The baked golden Oreo cookies, combined with the strawberry jello and melted butter, create a crunchy and flavorful topping that’s just irresistible.

Assembling the Strawberry Shortcake Crumble

Now comes the fun part – assembling our strawberry shortcake crumble. Layer the white cake with fresh strawberries and top it with a generous amount of strawberry crunch crumbles. The moist layers of strawberry cake and the crunchy crumble create a delightful contrast, making it one of our favorite desserts.

Variety of Ways to Enjoy Strawberry Shortcake Crumble

The great thing about our strawberry shortcake crumble is that it can be enjoyed in a variety of ways. You can serve it as is, pair it with a scoop of vanilla ice cream (try our No-Churn Ice Cream) or even use it as a unique topping for your favorite vanilla pudding mix. It’s a versatile dessert that can also be used in other great recipes like strawberry crunch cupcakes, strawberry crunch cheesecake, or even a strawberry crumble coffee cake.

Cook Time: 35 minutes

This Strawberry Shortcake Crumble is a delightful summer dessert that blends sweet, tart, and crumbly textures. It's perfect for a warm afternoon treat or a family get-together.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/2 cup old-fashioned oats

Strawberry Filling

  • 4 cups fresh strawberries, hulled and quartered
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cubed
  • 1/3 cup whole milk

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish.
  2. In a medium bowl, combine flour, sugar, oats, and cubed butter to make the crumble. Set aside.
  3. In another bowl, combine the strawberries, sugar, cornstarch, lemon juice, and vanilla extract for the filling. Pour the mixture into your prepared pie dish.
  4. Make the shortcake: In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add the chilled, cubed butter and use your fingers to rub it into the flour until the mixture looks like breadcrumbs. Pour in the milk and stir until just combined.
  5. Drop spoonfuls of the shortcake dough evenly over the strawberry filling. Then, sprinkle the crumble topping over the shortcake dough.
  6. Bake for 35-40 minutes, or until the crumble is golden and the strawberry filling is bubbling.
  7. Let the strawberry shortcake crumble cool for at least 15 minutes before serving.
  8. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
