So excited to have Paige from The Crunchy Mamacita back here on Something Swanky! Remember the Jumbo 3 Chip Cookies she did last month?? She’s at it again, just in time for Christmas Cookie season, with Shortbread!!

I’m Paige from The Crunchy Mamacita and I wish I had a glamorous picture of myself to share with all you Swanky followers but I’ll be the first to admit I’m anything but glamorous! I’m a busy mama to three little boys who LOVES to bake, even while wearing my baby 🙂 My family is crazy for shortbread and this is my go-to no-fuss shortbread recipe. It is soft, buttery, not overly sweet, and goes perfect with coffee or tea.
Melt-In-Your-Mouth Shortbread
2 cups butter, softened
1 cup white sugar
2 tsp vanilla or almond extract
4 cups all-purpose flour
2 tsp cornstarch
Preheat oven to 325 degrees F. 
Cream butter thoroughly. Add vanilla or almond extract then slowly add sugar and mix well. Sift together flour and cornstarch, add to butter mixture and mix well. Press into an ungreased jelly roll pan (11×15″). 
Bake for 30 minutes. Cut shortbread into pieces while it is still warm. Enjoy!
