One of the (many) things I love about Memorial Day is that it reminds me that the 4th of July is right around the corner. I always need a gentle nudge to start preparing recipes to share with you guys well ahead of the actual holiday.

Otherwise, I’ll totally forget. Because that’s how my brain operates these days.

I’ve been wanting to make one of these cute flag fruit pizzas FOREVER, and we finally got around to doing it on Monday.

I loved that my daughter could help make it! I outlined the pattern of the flag in the frosting (just because I’m a control freak– she totally could have done it her own), and she placed the berries down.

And, okay, fine. I was twitching a little bit on the inside when she didn’t put the blueberries in nice, orderly rows. But it’s cool. We good. I survived.

Never mind that she kept saying,

Mooooommmmmmm, I think I’m going to drop it! Mom!!!!”

Over and over again.

And I’m all,

“Just hold still! You’re doing great! Mommy needs just one more shot!”

This flag is just a combination of my favorite recipe for soft sugar cookie and a crazy-easy cream cheese whipped topping that you are going to LOVE. Fruit Pizza

Yield: 15 bars

A patriotic fruit pizza on a soft sugar cookie crust topped with a sweet cream cheese whipped topping.

Ingredients

For the Cookie Crust:

  • 1 cup butter, softened
  • 8 oz cream cheese, softened
  • 1½ cups sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2½ cups flour
  • 1 teaspoon baking powder
  • ½ tsp baking soda

For the Frosting:

  • 8 ounces cream cheese
  • 1/2 cup granulated sugar
  • 8 ounces Cool Whip
  • Strawberries and blueberries for the flag topping

Instructions

For the Cookie Crust:

  1. Preheat oven to 350ºF. Prepare a 9x13 jelly roll pan or baking dish by lining it with parchment paper or foil and lightly spraying with cooking spray.
  2. Use an electric mixer to beat together the butter and cream cheese until smooth. Mix in the sugar, and be sure to scrape down the sides of the bowl.
  3. Mix in the egg and the vanilla.
  4. Add the flour, baking powder, and baking soda. Mix until soft dough forms.
  5. Spread the dough evenly in the pan or dish. Bake for 20 minutes. Let cool completely before frosting (recipe follows) and cutting.

For the Frosting:

  1. Use an  electric mixer to beat together the cream cheese and the sugar until smooth. Scrape down the sides as needed.
  2. Add the Cool Whip and beat until smooth, scraping down the sides at least twice during mixing.
  3. Spread the frosting over the COMPLETELY COOLED cookie bars and top with berries.

Keep chilled until ready to serve.
