It starts with a cake mix (which is the only way I do carrot cake– unless it’s this one and only amazing from-scratch Dulce de Leche Carrot Cake.) so you know these cookies are ridiculously soft, fluffy, and spiced just right. We’ve got carrot cake, white chocolate, a sweet sugar coating, and soft, almost-fudgy centers. You could definitely add chopped pecans to these (either in the dough or sprinkled on top) if you wanted. I didn’t think of doing that until after I photographed, but I definitely will next time I make these! On a side note… can I just say that I hate it when Easter lands in March?? I just feel robbed of my baking time! Typically, I like to spend all of March on St. Patrick’s day and Girl Scout cookies. But this year, I barely squeezed in this Thin Mint Marshmallow Swirl Bark and this Leprechaun Popcorn Chow. And now it’s the week before Easter, and I know I won’t have the time to share all the Easter-y desserts I’ve been dreaming about before Sunday. On the upside, I know I have to make the most of my time. No fooling around this year! I’m only sharing the best of the best, so you know these are recipe you want to make in time for Easter. I feel like carrot cake is the poster child dessert of Easter. I don’t really know why I feel compelled to make it every year, because I don’t actually like carrot cake all that much. It’s a texture thing. I just don’t like the chunks of carrots and (heaven forbid) raisins in my cake ????. But still, like a crazy dessert lady, I persist in looking for more carrot cake recipes every year. And when I find a carrot cake recipe that I love, it’s a BIG DEAL. Print Ingredients 18.25 ounce box carrot cake mix (JUST the dry mix) 2 eggs 1/2 cup canola or vegetable oil 1/4 cup flour sugar for coating dough 18 Hershey Kisses and/or Hugs optional: melted white chocolate for drizzling Instructions Preheat oven to 350ºF.Mix all ingredients together until dough forms.Scoop dough by heaping tablespoons into a small bowl of sugar and roll into balls. Place on ungreased cookie sheet, and bake for 10 minutes.Press a Hershey Kiss or Hug into each of the cookies fresh out of the oven.Let cool on baking sheet for 10 minutes before removing to a wire rack.Drizzle with melted white chocolate if desired.
