Cadbury Cream Egg Brownies Recipe

These fudgy brownies topped with a smooth chocolate ganache have a sweet cream filling just like Cadbury Cream Eggs! Except these are SO much better.

Ingredients

For the Brownies:

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/3 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt

For the Cream Filling:

  • 1 cup Corn Syrup
  • 1/2 cup softened Butter
  • 6 cup Powdered Sugar
  • 6 tbsp heavy whipping cream
  • 2 tsp Vanilla
  • Yellow Food Coloring

For the Chocolate Ganache:

  • 1/2 cup heavy whipping cream
  • 1 cup chocolate chips

Instructions

For the Brownies:

  1. Preheat the oven to 350ºF. Line and lightly spray a 9×13 baking dish.
  2. Whisk together all of the brownie ingredients until batter forms. Spread the batter in the baking dish. Bake for 15-17 minutes until edges are pulling away from the dish and center looks set.
  3. Let cool completely.

For the Cream Filling:

  1. Whisk together the corn syrup and softened butter. Vigorously whisk in the powdered sugar and heavy whipping cream until a smooth mixture forms.
  2. Set aside half of the filling. Add desired amount of food coloring to the other half and mix until completely yellow.
  3. Spread the yellow filling over the brownies. Chill in the freezer for 10 minutes.
  4. Spread the white filling over the yellow. Chill in the freezer for 10 minutes.
  5. Make the ganache: over medium heat, warm the heavy cream. Remove from heat and add the chocolate chips. Stir until chocolate is completely melted.
  6. Pour the ganache and spread over the brownies. Let chill until ganache has set.

Notes

  • Apparently the middle of Cadbury Cream Eggs are orange. How long ago did that happen?? Anyway, if you want your cream filling to look more authentic consider using orange food coloring instead of yellow.
  • These are really yummy served chilled. They are plenty good at room temperature, definitely. But I liked them out of the refrigerator better.
  • Don’t skip out on chilling the brownies in between adding layers of frosting. Otherwise you won’t have distinguishable layers.
