Brownie Batter Filled Chocolate Chip Cookie Sandwiches

If people could have cookie soul mates, this one would be mine. Which is fitting, since it’s actually two cookies sandwiched together. With a brownie filling. Because obviously my cookie soulmate would need to have multiple personalities.

Today’s recipe is a dear old friend from waaaaaaay back in my archives. As so many of my posts are these days, I hope you don’t mind. I’m having so much fun digging back through my first posts and tuning up the recipes, re-shooting the photos, and cleaning up my blog.

For kicks, here’s what my photo for this recipe used to look like:

Styling issues aside (😱), this recipe was fraught with problems.

For one: I used margarine to bake those cookies. Ohemgee. I KNOW. You see how there are no crispy, golden edges? And the tops didn’t bake into a beautiful, golden brown? That’s because there’s no butter in there. Old me didn’t mind. Learned-how-to-bake me minds a lot.

So, out with the margarine cookies and in with the butter! And I think I speak for all of us when I say, phew!
