I grew up thinking that I didn’t really like oatmeal all that much. It just always tasted slimy to me, and I had a hard time getting it down no matter which flavor I tried. The Quaker Honey Nut flavor was the closest I ever came to actually liking any of those instant oatmeal packs, but for the most part– I just stayed away from the stuff.

That is, until I discovered cold oatmeal. As it turns out, I love chilled oatmeal! Whether it’s a cooked-and-then chilled recipe (like this one) or overnight oats that aren’t cooked at all, as long as they’re cold– I’m on board!

Uncooked oats (like in the ones in this Overnight Oats recipe) are supposedly more nutritious and even help relieve serious gastrointestinal discomfort and lower bad cholesterol.

Preparation is simple: place oats in a container you can easily take with you in the morning. Add milk (almond milk is great!), raspberries, a little bit of honey, almond slices, and a few (or more!) white chocolate morsels. Let it all sit and soak overnight, and voila– in the morning, all you need to add is a spoon!

Raspberries, white chocolate, and almonds are one of my very favorite flavor combinations of all time. But I’ve also enjoyed making overnight oats using chocolate almond milk too. And, really, you can make just about any combo you’d like with this basic recipe if you want to get  little creative. Overnight oats are so easy and versatile, just one of the many reasons I love them so much!

Raspberry White Chocolate Overnight Oats

Yield: 1 serving

Raspberry White Chocolate Overnight Oats are a delicious and easy way to prep breakfast for on the go!

Ingredients

  • 1/2 cup rolled oats (I've used both old fashioned and quick oats)
  • 1/2 cup + an extra splash almond milk
  • 1 tbsp honey
  • 1/2 tbsp white chocolate morsels (more or less to taste)
  • 2 tbsp raspberries (more or less to taste)
  • 1 tbsp sliced almonds (more or less to taste)

Instructions

Place the oats in a container that has a sealing lid (a mason jar works well).

Pour in the milk and honey, stir to make sure all of the milk reaches all of the oats and that the honey is mixed in enough to sweeten every bite!

Add the white chocolate, raspberries, and almonds (mix in if desired or leave on top).

Chill overnight. Serve in the morning!

  1. I can never get enough oatmeal! I agree, cold oatmeal is so much better than hot– it’s almost like they aren’t the same food, they’re so different!
    And really? Nothing could possibly taste bad with white chocolate and raspberries involved!

  2. Oh wow, I am in love with this flavour combination – especially if I can have it for breakfast! Overnight Oats are honestly one of the best things in life, I love them straight out of the fridge, so much better than hot oatmeal!

  3. I will only eat hot oatmeal if it’s been baked, the slimy thing has been a drawback for me also. This I can handle and will definitely try. Raspberry and white chocolate is one of the best flavor combos on the planet!

  4. Love! I tried overnight oats for the first time a few months back and was hooked. I made chocolate and raspberry combo, but I heated mine in the microwave and added a pile of raspberries after heating.

    This looks just as good, and definitely a delicious way to start the day cold or hot.
