Lemon Cream Smoothie

We are BIG-time smoothie people around here (although you wouldn’t know it here on the blog, because I’m horrible at photographing them!). We blend at least one batch up every single day, and it’s one of those few things I do that makes me feel like I’m winning at being a Mom– because Emma loves them, and they are SO GOOD for her little growing body!

She’ll even drink green smoothies (which we call “salad smoothies” or “herbivore smoothies” when she was in her dinosaur phase), which I think is pretty amazing considering I can’t get her to touch a vegetable otherwise.

We LOVED this creamy lemon smoothie. It’s almost like a lemony frozen yogurt– delish! And so perfectly refreshing for a hot summer day.

Lemon Cream Smoothie

This recipe came from one of my favorite cookbook authors (Red Velvet anyone?) and blogging  acquaintances, Deborah Harroun of Taste and Tell. She wrote a cookbook with 100 smoothie recipes just for kids! The recipes range from smoothies that will help your kids sleep better (like Sleepytime Honey Almond) to Lunch Time smoothies (like PB&J) to dessert smoothies (like Caramel Apple)!

Lemon Cream Smoothie

Lemon Cream Smoothie

Yield: 4 servings

It's almost like a lemony frozen yogurt-- delish! And so perfectly refreshing for a hot summer day.

Ingredients

  • 1 cup milk
  • 1/2 cup plain or Vanilla Greek Yogurt
  • 3 tbsp. FRESH lemon juice*
  • 2 tbsp sweetener (I used Truvia, but you could use sugar or honey)
  • 1 3/4 cups ice cubes
  •  

Instructions

Add all the ingredients to the blender and blend until smooth. Serve!

Notes

*Using fresh lemon juice makes a HUGE difference in how this tastes. I would strongly suggest forgoing the bottled lemon juice and making a trip to the store for a couple of lemons if you don't have any on hand already.
