Cinnamon Sugared Almonds, you'd never believe they were so EASY! | somethingswanky.com

Every year, I swear I’m going to “get into” football more. My husband loves it, my family loves it, and I’m actually getting to see most of my brother’s season this year for the first time in my life!

But every year I find myself way more interested in editing photos, surfing Pinterest, and well… pretty much anything besides the football game. Somehow I even end up chatting most of the time away with friends I haven’t seen all week during my brother’s football games! My dad just hangs his head in shame when my defense is, “I just don’t know what’s going on! I can’t understand anything, so it’s hard to pay attention!”

I may not understand why a “first down” is a good thing (didn’t we want him to make it to the end zone??) or always know the right time to cheer… but I really get football game food. THAT I can do!

The first thing you need at a football game is a really great hot dog. And I mean a real dog, with alllllllllll the fixins’, chilli included. That’s for the first half.

By the second half, you need something just to snack on. And it really needs to be sweet. The thing you’re looking for during the second half of a football game is a bagful of warm cinnamon sugared almonds!

And these are seriously SO EASY to make, there is no reason you can’t make a big batch of these for yourself at home and take them to the game. I poured mine into a paper sack tied up with a string, and the almonds totally kept each other warm until I was ready to eat them!

All you need is sugar, cinnamon, water, almonds, heat, and about 10 minutes. SO EASY!!!! And so delicious. You’re going to love this recipe!

Cinnamon Sugared Almond Tips

  • You can also change up the nuts! I’ve used pecans, and they are delicious as well.
  • If your sugar doesn’t dissolve all the way or crystallizes, just add a little more water and stir until it does. It will still taste great!
  • These are best eaten when they’re still warm, but they’ll keep for a few days if you store them in an airtight container. Enjoy!
  • If you’re not going to eat the almonds right away, store them in an airtight container. They’ll stay fresh for up to a week.

Cinnamon Sugared Almond FAQ

What if I don’t have a large skillet or pot?

You can use a smaller skillet or pot, but you’ll need to adjust the recipe accordingly. Just make sure to keep an eye on the almonds so they don’t burn.

What if I want a more caramelized flavor?

If you want a more caramelized flavor, you can cook the almonds for a little longer. Just keep an eye on them so they don’t burn.

What if my sugar doesn’t dissolve all the way or crystallizes?

Just add a little more water and stir until it does. It will still taste great!

Can I reheat the almonds?

If you’re not going to eat them all at once, store them in an airtight container. They’ll stay fresh for up to a week. You can also freeze them for up to 2 months. Reheat them in the oven on low heat (200 degrees F) for 10-15 minutes.

Cinnamon Sugared Almonds

Yield: 3 cups

Ingredients

  • 3 cups whole almonds, raw
  • 1 cup sugar
  • 1/2 tbsp. cinnamon
  • 1/4 cup water

Instructions

  1. In a large skillet or pot combine the sugar, cinnamon and water over medium-high heat until the sugar has dissolved.
  2. Add the almonds and stir constantly with a spoon or spatula, coating the almonds with the syrupy mixture.
  3. Keep stirring until the sugar crystallizes (this takes about 8-10 minutes) and it looks sandy. Don't stop stirring!
  4. Remove the pan from heat and scoop the almonds onto wax or parchment paper.
  5. Let the cinnamon almonds cool for a few minutes before serving.

Notes

You can change up the seasonings! I've used sweet popcorn seasonings in place of cinnamon, and it's delicious!

  2. I’m pretty much the same way about football. I sit down to watch with the hubby… and ask what color I’m routing for… blue, red, green etc. I then start checking bloglovin etc… and I’m totally lost. I think the dog is actually better at paying attention 🙂

  3. One of my favorite things about the holidays are those sugared nuts! I had no idea it’s so easy to make them. I guess some Chicago street vendors won’t be getting any money from me this year! I can’t wait to try this recipe!! Pinned and sharing on facebook tonight!

  4. Have you ever tried to double or triple the recipe? I have tried to make an extra large batch twice from a recipe similiar to yours and ended up with a sloppy mess of Almonds where the sugar never crystallized. But when i did the recipe w/the amounts mentioned it turned out great. Any ideas? I would like to try your recipe but want to make sure it is possible.

  5. This is a great method! Do you think it could be used to make a coconut coated version. Say with coconut sugar and shaved coconut meat? I make roasted coconut almonds but always struggle with getting the coating to stick. What do you think?

  6. These are wonderful! I had cinnamon sugar almonds years ago at a Ren Fair.. and liked them but i’ve never been a fan of Almonds. Now years later, I like them more but still find them bland. Found this and said “Hey! Lets try!”. I only had a cup of almonds so I cut the recipe best I could. Watching the sugar granulate on the almonds in like in instant was like MAGIC!! So in short, I will be going back to the store to get more. Hubby and I thank you.

  7. HI. Would LOVE to make these for gits. But… do I just buy regular almonds in a bag…they just say Almonds. I can find them whole. But they don’t say raw.

    Thanks!

  11. I made these today for (believe it or not) a football party we’re hosting tomorrow! I only had pecans so I made it with those and they turned out fantastic! I’m hoping that some of them will actually survive until the game tomorrow! I had no idea how easy these are to make but now I will be making them often I think! Happy football!

  12. These turned out great, and we’re done in about fifteen minutes start to finish. I added a little vanilla and some extra brown sugar for the caramel flavor, and they turned out fabulously! Thanks for the recipe.

  13. Oh my goodness!  I went to the craft fair today and resisted buying some of the cinnamon roasted nuts because I knew I wanted to try this recipe.  I’m so glad I did.
I am also glad I found a recipe that doesn’t include egg.  My husband is allergic and it isn’t fun to make goodies and not be able to share!
I added about a teaspoon of vanilla extract and I love that too.  It was really hard to not just eat all of them right after making them.
