I like to play around with different ways to change up our favorite pancake recipe recipe or even just doctor up a simple pancake mix. Tips & Notes for Cinnamon Oatmeal Blender Pancakes

  • Give the wet ingredients a quick pulse before adding the dry ingredients. This aids in not having to overmix the batter as a whole once the dry ingredients have been added.
  • Follow the directions exactly and add the dry ingredients only AFTER the wet ingredients are in. Otherwise you’ll risk your dry ingredients clumping together at the bottom of the blender and not incorporating into the batter.
  • Don’t let the blender run longer than necessary to just barely form a batter. Some lumps are okay, and some ingredients left on the side of the pitcher are okay too. Grab a spatula and give it a quick stir by hand (scraping down the sides if you need to) after you’re done with the blending.

Cinnamon Oatmeal Blender Pancakes

Yield: 12-14 pancakes

Cinnamon Oatmeal Blender Pancakes are the perfect warm and hearty breakfast for those crisp Fall mornings!

Ingredients

  • 6 tablespoons vegetable oil
  • 1 cup plain Greek yogurt
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 1/4 cup all purpose flour
  • 1 cup quick oats
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tsp cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Add the vegetable oil, Greek yogurt, milk, and vanilla to the blender. Blend well.
  2. Add the eggs and pulse until the yolks are broken and eggs are fully mixed in.
  3. Add the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt. Slowly blend only until a batter forms.
  4. Scrape down the sides if needed and use a spatula to do a final stir by hand to double check that all dry ingredients have incorporated into the batter. Lumps are okay.
  5. Pour 1/4 cup of batter on to the buttered griddle for each pancake. Let cook for about one minute, until the edges start to look try and pocks form on the top. Flip and cook on the other side for about a minute.
