Is it Friday yet?? Actually, more appropriately, is it January yet??

Does anyone else feel like once October hits, “sitting down to relax” just doesn’t happen anymore? Like ever. I mean, I know we’re all busy all year. But it seems like these last few months really rob you of even those short moments you get here and there.

I guess that’s what chocolate is for, right?!

Cheesecake Brownies

These cheesecake brownies are nothing if not chocolate-y! With rich fudgy brownies on the bottom and chocolate frosting up top, you can’t miss it. And that’s not to say the creamy cheesecake layer in the middle doesn’t hold it’s own! These three layers together are a trifecta of dessert happiness.

Perfect for when you are being moment-robbed by end of the year craziness.

I love cheesecake bars. They are so much easier to make than an actual cheesecake– fewer ingredients, less mess, and less overall troubleshooting (ugh, why did my cheesecake crack?).

Plus, I feel like it’s easier to get creative and jazz up cheesecake bars more than it is an actual, full-on cheesecake. For instance, I think these cheesecake brownies would be so much fun with chocolate chips or sprinkles mixed in. Or maybe a layer of peanut butter before pouring the cheesecake batter on. Or maybe topping them with a caramel coconut frosting instead of chocolate. Endless, endless possibilities here.

This recipe comes from one of my favorite new blogger cookbooks, Sweets & Treats with Six Sisters’ Stuff from the amazing girls over at Six Sisters’ Stuff.  I can’t believe I completely spaced taking a photo of it for this post (can I play the baby brain card again??), but I did. So you’ll just have to trust me on this: it’s a GREAT book.

I mean, it’s completely devoted to sweets and treats. Could it be any more up my alley?? (that’s best read in a Chandler Bing voice, FYI).

Anyway. Some of the recipes that I can’t wait to try include: Brownie Batter Oreo Ice Cream, Graham Cracker Monster Cookies, and Mississippi  Mud Brownies. You guys are going to LOVE this cookbook, and just in time for the holidays!

Cheesecake Brownies Recipe

Ingredients

  • 1 boxed brownie mix or homemade brownie recipe
  • 8 ounces cream cheese, softened
  • 2 tbsp butter, softened
  • 1 tbsp cornstarch
  • 14 ounces sweetened condensed milk
  • 1 egg
  • 1 tsp vanilla extract
  • 16 ounce container chocolate frosting

Instructions

    1. Preheat oven to 350ºF. Grease a 9x13 baking dish with nonstick cooking spray.
    2. Prepare brownie mix according to directions on package. Pour batter in the baking dish.
    3. Beat the cream cheese, butter, and cornstarch until fluffy. Gradually beat in the sweetened condensed milk, egg, and vanilla until smooth. Pour cream cheese mixture over the brownie batter.
    4. Bake for 45 minutes. Allow to cool. Spread frosting over top. Store covered in the refrigerator.
