If you’re an ooey, gooey, caramel-y, decadently chocolate lover… these are the cookies for you!

There’s really nothing secret or tricky about these guys. It’s a brownie in cookie form, stuffed with Snickers bites. I mean… it’s about as no-brainer as a cookie gets.

Instead of chopping up Snickers bars, I used the new Snickers bites (you can find them in bags in the candy aisle) and just threw them in whole. That way there’s a little less caramel spillage (which can sometimes lead to burning depending on your oven), but as you can see a little caramel still manages to escape here and there.

And that’s really okay…. maybe even downright awesome.

I did make sure to reserve a few from the bag to chop up and press into the tops of the cookies. I love doing this, because it adds an extra layer of ooey gooey decadence, makes the cookie look a little prettier, and it tips people off as to what’s inside the cookie (like a label, but yummier ๐Ÿ™‚ .

I skipped over chill time and just went straight to bakin’ after mixin’. You can see in the photos here that they spread a bit, which I didn’t mind at all. But if you’d like a thicker cookie with less spreading, simply cover the dough and chill for an hour before baking.

Snickers Brownie Cookies

Ingredients

  • 1/2 cup canola or vegetable oil*
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup all purpose flour
  • 3/4 cup cocoa powder
  • 1 tsp baking soda
  • 1 tbsp. hot water
  • 1/2 tsp salt
  • 1/2 cup semi sweet chocolate chips
  • 1 Snickers bites or chopped Snickers bars

Instructions

  1. Using a large bowl and a stand or hand mixer, beat the olive oil and sugar until well mixed. Add the eggs, one at a time, beating in between the addition of each egg. The mixture should become creamy as the eggs are added.
  2. Dissolve the baking soda in the hot water, set aside.
  3. Add the cocoa powder, flour, and salt. Beat until dough** forms.
  4. Mix in the dissolved baking soda.
  5. Mix in the chocolate chips and snickers bites.
  6. Chill for 1 hour if desired. Scoop the dough by heaping tablespoons onto a parchment or silicon lined baking sheet.
  7. Bake at 350 degrees F for 10 minutes, until the edges are set.
  8. Let cool completely on the baking sheet before removing to a wire rack.

Notes

*I haven't had great results substituting butter, so I don't recommend it.

**Dough will be similar to a very thick brownie batter.

  1. Somehow I missed those Snickers bites on the candy aisle… A bag of those would be deadly in our house; it wouldn’t even last 24 hours! And your chocolate cookies look incredibly decadent. As a huge chocoholic, I’m always up for seconds or thirds of a dessert like that! ๐Ÿ™‚
