Single Serve Peanut Butter Rice Krispies Treats on somethingswanky.com

I like the idea behind making your favorite treats in a single serving. It promotes the idea that you can still eat the things you love as long as you keep the portions under control. 

You could use a lighter fat in place of the peanut butter– like a light butter spread. I went with peanut butter to add the flavor and to add a little bit of protein.

Pb Rice Krispie Treats

Skinny Saturday: Single Serve PB Rice Krispies Treats

Ingredients

  • 1 tsp peanut butter
  • 2/3 cup miniature marshmallows
  • 3/4 rice krispies cereal

Instructions

  1. In a medium bowl, microwave the peanut butter and marshmallows.
  2. Stir until smooth. Mix in the cereal with a rubber spatula.
  3. Lightly spray a small bowl (I used a small square tupperware) and press the rice krispies treat into the bowl. Let rest for 1-2 minutes.
  4. Use a small spatula to pop the Krispies Treat out of its mold. It should release easily.

  1. You’re so inspiring Ashton! As long as you’re determined you can do anything at all. Loving your body is a long process we all struggle with, especially as food bloggers, and you may not ever arrive at a weight or look that you think to be perfect, but everything is relative.   2. I’m all about small dessert recipes! I have a desser that I use when I want something sweet but don’t want the calories…have you ever tried melting peanut butter in the microwave and eating it with a sliced apple? Sometimes fruit just doesn’t cut it for me as a healthy dessert, but something about the melted peanut butter makes it feel decadent. Try it! 🙂

  3. Ashton, don’t feel bad. At least you are trying. I posted my weight loss plan on my blog at the end of last month and I honestly haven’t done a thing toward my weight loss since then. :S So good on you for sticking to your weight loss plan. 🙂

    These rice crispy treats look great. I like that they are a single serving. I can eat a whole pan of rice crispy treats all by myself. Which is no bueno with a weight loss plan. I will have to try them.

  4. So glad to hear you had a better week, minus the whole foot thing. I really hope that gets better soon! Good for you to just weigh once a month. And honestly, I’ve been reading that you should only weigh once every TWO weeks, publicized or not. The once a week thing can be brutal! Loving the skinny treats. Keep ’em coming!

  6. I completely understand going down to once a week. But, I wanted you to know I completely understand your struggle. I weigh more than I ever have and though most wouldn’t say I’m overweight, I’m terribly uncomfortable and none of my clothes fit either. It is helpful to know I’m not alone and someone else finds this weight/ love if food balance hard. Good luck on your next month.

    • Thanks Brenna 🙂 That’s exactly how I feel! I don’t think most people would feel like I’m nearly as overweight as I do. But only we know what weight we’re really comfortable at! And I’m definitely not there!!

  8. Dieting/healthy eating is sooooo crazy hard, and keeping a positive attitude through it all is even harder (I’m speaking from lots and lots of experience here. I’m having NO luck on the new WW points system). But I know you’ll do it. The scale is just a number anyway–just focus on being a healthy, happy you, and you’ll get there. 🙂 Also? Love the single-serve rice krispie!

  9. Oh, I didn’t like that new WW stuff either. I think the one I learned 8 years ago is the way to go. I have given my books to a couple of sisters so they don’t have to pay for the new stuff. I am a total emotional eater and baking is my favorite hobby. Makes it a little hard keeping my weight in check for sure. I am going to keep pinning the heck out of all of your great looking recipes though. My 16 and 20 year old sons get to enjoy them!

  11. I totally know how you feel, Ashton! Ever since my roommate bought a scale for our apartment, I’ve been obsessively weighing myself every time I’m about to step into the shower.

    Seeing my weight fluctuate up and down for the past 3 months is really nerve wracking, especially since it fluctuates between 1-3 lbs each time. Keep it up!With good food choices and exercise, we’ll both start losing some =)

    Just a tip, to make these pb rice krispie treats even more guilt-free, use natural peanut butter or even better, natural almond butter instead. There are extra sugars, oils, and preservatives in regular peanut butter that your body doesn’t need. Natural nut butters (1-ingredient!) are so much better for you and make you feel even better about your food choices =D
