One Bowl Monster Cookie Dough Cupcakes (4 Servings)

 

So here’s the story behind these:

I had mentioned in another post that I have made monster cookie dough cupcakes before and would be posting the recipe at some point in the “near future.”
One of my darling readers decided she’d had enough of my empty promises and emailed me demanding a recipe!
(I’m totally just kidding. She really sent a very sweet email asking if she could pretty please have the recipe for her husband’s upcoming birthday.)
So I promised her a recipe this week.
10:46pm Thursday night arrived, and still no cupcakes in the Swank kitchen.
Typical.
Desperately not wanting to clean the kitchen for a third time in the day,
I thought I’d give a go at a single serving cupcake– and I goofed and got 4.
So these are really Quadruple Serving Monster Cookie Dough Cupcakes.
Thank goodness I’m such an experienced cupcake eater.
Whew.
I can for sure handle eating 4.

But you only have to clean one bowl and one fork when your done!
(with a quick rinse in between the batter and the frosting :)

One Bowl Monster Cookie Dough Cupcakes

Ingredients:

    For the Cupcakes:

    • 1 Tbsp. Peanut Butter
    • 1 Tbsp. Butter
    • 1/4 c. Flour
    • 2 Tbsp. Sugar
    • 1 Egg White
    • 1/2 tsp. Baking Powder
    • pinch of salt
    • 1 1/2 Tbsp. Milk
    • a teensy splash of vanilla
    • a small handful of Chocolate Chips

    For the Cookie Dough Frosting:

    • 2 Tbsp. Peanut Butter
    • 2 Tbsp. Margarine or Butter (softened to room temperature)
    • 2 Tbsp. Flour
    • 2 Tbsp. Brown Sugar
    • 1/2 c. Oats
    • 3/4 c. Powdered Sugar
    • 2-3 Tbsp. Milk
    • a handful of plain M&Ms
    • a handful of Chocolate Chips
    Instructions:

    For the Cake
    1. Melt butter in the microwave for 10 seconds.

    2. Mix in the rest of the ingredients until your batter forms.
    3. Bake in cupcake liners at 350 for 19 minutes. Let cool.

    For the Cookie Dough Frosting:
    1. Using a fork mix together the butter, peanut butter, and 1/4 c. powdered sugar.

    2. Add 1 Tbsp. milk. Whisk with the fork until it’s pretty smooth.
    3. Add the remaining powdered sugar (1/4 cup at a time, mixing after each addition), the brown sugar, and the flour. Add milk as needed to help with the consistency.
    4. Stir in the oats (you can use more or less depending on your preferences), M&Ms, and chocolate chips.

    Simple Adaptation for Full Recipe:

    1. Bake these Peanut Butter Cupcakes (with the addition of 1 cup chocolate chips).
    2. Prepare Monster Cookie Dough Dip (adding 2-3 tbsp. additional milk for a more “frosting-like” consistency).
    3. Top the amazing peanut butter chocolate chip cupcakes with the amazing monster cookie dough frosting.

    12. @jilliann mmmmmmm…… I really can’t think of a great sub since these are essentially peanut butter cupcakes… BUT, if you wanted to just make the dip, you could substitute cream cheese? That would be more of an oatmeal chocolate chip cookie dip, but hey! If you don’t like M&Ms, maybe that would work for you :) And then if you want it on cupcakes, just make your fave yellow cake recipe to put it on!

    25. These cupcakes looked really delicious, so my 2 best friends and I decided to spend an afternoon baking. We baked the cupcakes and they came out of the oven looking perfect, however once actually tasting the cupcakes, we discovered that contrary to their looks, they tasted disgusting. We also made the frosting which turned out looking and tasting like stale peanut butter flavored oatmeal. We thought we must have done it wrong, so we tried again and they came out even worse! This time we tried not adding the peanut butter and using less oats. They tasted like cardboard and flour (which is what the cupcakes tasted of as well), not one bit like the delicious cookie dough frosting you described. We are very disappointed in this recipe and are quite sure that you have made a mistake in the portions of ingredients to add. We do not recommend this recipe to anyone who would like to eat delicious cupcakes as shown in the pictures.

        In an effort to improve the recipe and find out where it may have gone wrong for you, I re-made the cupcakes this afternoon following this recipe exactly as it’s written. Just like before, they turned out delicious. The error must be on your part somewhere.

        Fortunately– not a total waste of time. These desperately needed a re-shoot anyhow.

    26. I have been meaning to write since I first tried this recipe. I have made these cupcakes numerous times (exactly as written, by the way) and they are beyond delicious!!! Thank you so very much for this recipe. These cupcakes make me so happy every single time I make them (I eat 2 right away and freeze the other 2) So perfect!!!!XO
