SO! Guess what. Today is kind of a fun post.

Remember when I hosted that cookie butter party a week or two ago? And I said I was going to make it a “You might be a dessert blogger if…” themed post. But then I didn’t? Because… I had totally forgotten about it! Until I wandered over to Dorothy’s blog and saw her cookie butter recipe, patiently waiting there for the link party to begin. Ack!

So rushed back over to my dashboard and threw together a post, lickity split. And totally forgot the best part of the whole post: the jokes!! Some of you contributed some great one-liners, and I definitely don’t want to skip out on sharing them with you.

So today is “You Might Be a Dessert/Food Blogger if…” day.

Speaking of faves….can I interest you in a new fall favorite dessert?? I’m completely in love with this trifle. Pumpkin Mousse + Brownies + Caramel Sundae Sauce = yummmmmmmm.

I kept thinking I could just eat “one more bite,” but I seriously could not stop coming back for more! I’m not even ashamed to admit that I ate that entire jar.

By myself.

In about 30 minutes.

Totally worth it.

Pumpkin Mousse Brownie Trifle

Ingredients

  • 1 - 3.4 oz package of Pumpkin Spice Instant Jello Pudding*
  • 1 - 8 oz tub Cool Whip (do not sub whipped cream if you're not eating immediately)
  • 1 1/4 c. skim milk
  • 1 9x9 pan of your favorite brownies, baked and cooled (store bought is just fine too)
  • caramel sundae sauce
  • pecans and chocolate chips for layering (Heath would be awesome too)

Instructions

  1. Whisk together the milk and pudding mix, until it begins to thicken (2-3 minutes).
  2. Immediately whisk in half of the cool whip until thoroughly combined. Fold in the remaining cool whip with a rubber spatula. Set aside.
  3. Cut brownies into 1" pieces.
  4. Layer 1/2 of the total brownie pieces among the bottoms of 4 mason jars or sundae dishes.
  5. Spoon (or squeeze on, depending on the sauce you're using) about 1 tbsp. caramel sauce over the brownie layer. Sprinkle with desired amount of chocolate chips and pecans (less is more here).
  6. Pour/spoon/pipe about 1/2 of the the total pumpkin mousse over the brownie/caramel layers in each glass, distributing evenly among the glasses.
  7. Repeat layers. Garnish with chocolate chips and pecans. Best when served chilled for about an hour. Serves 4.

Pumpkin Mousse Brownie Trifle Tips

  • You can use any flavor pudding mix for this recipe, but I love the pumpkin spice flavor.
  • If you’re not eating the trifle right away, wait to add the whipped cream until shortly before serving. It will start to deflate and not look as pretty.
  • Store leftovers in the fridge. Enjoy!

  1. I can’t stop laughing . I’ve read yoru lines a while back and again tonight. I can totally relate to most of the “you’re a dessert blogger if you … ” Last week I bought almost 10 bags of Hershey’s kisses. Pumpkin spice, candy cane and mint. You can never have too many. Of course none is for the trick or treat-ers :))
