I think I’m developing an intolerance.

And while I consider myself a fairly tolerant person, in general, there’s one thing that is starting to irrationally grate my nerves. I just can’t seem to get past it…

Internet Ignorance.

And I’m not talking about people who don’t spend 40ish hours a week in front of the computer like I do. I totally get that. I don’t expect everyone I meet to be a blogger geek or a social media fiend. But, yes, I do expect you to know how to email. And how to search for something on Google. And, for crying out loud, GOOGLE DOCS, people!! (or Drive, or whatever we’re calling it now).

At this point, using Google is just part of functioning in society. And I’m totally not joking around here– the inability to use Google makes me insane.

And if I’m being completely honest here, it goes beyond email and Google for me. I think I might even have aย  Pinterest Ignorance intolerance.

I have to fight this weird cringe thing on the right side of my body when people dismissively wave away Pinterest in a conversation. Does anyone ever do this to you? Like they think it’s some extreme form of Facebook or something. Like you’re some sort of internet zombie because you love Pinterest.

I just can’t understand people who won’t get on Pinterest because they’re afraid it’ll take up all of their time, that they’ll get sucked in. Yes, that is a risk, I agree. But Pinterest is so much more than a time suck, my friends!!

Pinterest is revolutionizing the internet!!! It’s a tool. Even my husband can see the logic in it– see something you like on the internet and don’t want to lose it? Pin it and come back later! See? It’s easy, and it just makes sense.

Or how about using it as a search engine? GENIUS. I don’t even bother googling recipes anymore. I’d so much rather search for a recipe right on Pinterest and browse through the photos and comments from people to narrow down which recipe fits what I need. Again: it’s just good sense!

Moral of the story: Just because I can understand and appreciate the inner workings of Google and Pinterest does not make me some crazed internet junkie. So stop judging me and learn how to use your email!!

Whew. Thanks for letting me get that off my chest! I think I can calmly discuss Rice Pudding now…

When I lived in Provo, there was this amazing rice pudding shop. It was set up like an ice cream shop, with rows and rows of different flavors of rice pudding. And it was this shop that opened my eyes to all of the possibilities rice pudding could hold. I realized for the first time that rice pudding didn’t have to be slimy and filled with raisins.

It could be decadent. It could be so very decadent. (And not gross at all. Seriously.)

If you’re not a rice pudding lover and haven’t tried my Triple Chocolate Rice Pudding recipe, start there. It’s a great “gateway” rice pudding, trust me .

But after you’ve tried the chocolate, you must make this peppermint cheesecake version. As it turns out, the holidays look goooooooooood on rice pudding ๐Ÿ˜‰ .

Peppermint Cheesecake Rice Pudding

Ingredients

  • 1 - 3.4 oz. cheesecake instant pudding mix
  • 1 - 8 oz. cool whip
  • 1 1/4 cups low fat milk
  • 1 cup cooked white rice, chilled
  • 1 cup Andes Peppermint Bits

Instructions

  1. Whisk together the pudding mix and the milk until it begins to thicken.
  2. Immediately whisk in the cool whip. Switch to using a rubber spatula to completely fold in the cool whip to the pudding.
  3. Fold in the rice, be sure to break up any clumps.
  4. Mix in most of the Peppermint Bits, reserving about 2 tablespoons to sprinkle on top as a garnish.
  5. Refrigerate at least 4 hours, overnight if possible. Serves 6.

Notes about this recipe:

  • To quickly chill your cooked rice, place it in a zip top bag and place it in an ice bath for 10-15 minutes.
  • Use sugar free instant pudding mix and cool whip free to lower the calorie/sugar/fat count of the recipe.
  • I prefer the Andes Peppermint Bits in this recipe to any other white chocolate peppermint candy, because it seems to be the most absorbent. If the chocolate doesn’t absorb any of the pudding, the crunch will make it feel like you’re eating hard rice…. which is not pleasant.
  • Letting it sit in the refrigerator overnight is really best, because it allows the rice and the chocolate to absorb some of the pudding– which will give it a better texture.

 

Suggested Variations:

  • Try using white chocolate pudding mix for White Chocolate Peppermint Mousse rice pudding!

  2. I was in a class at work yesterday and the instructor kept double-clicking on links… I swear by the end of the day I developed a twitch from watching him do it and then get confused why it opened two windows. I also go into seizure mode when I see people start to “peck” their keyboard. Gah.

    But as for rice pudding… I think I need a gateway for the gateway chocolate pudding, ha!

  3. This looks pretty much amazing. I’m always wanting to try to make some rice pudding, I just never get around to it! I just might try this for a Christmas Eve treat ๐Ÿ™‚

    Also, I would like to share my thoughts on Pinterest. I totally agree! When looking for recipes, I also head to Pinterest before Google. I really enjoy finding recipes on blogs more than your average recipe website. I find so much more creativity, thinking outside the box and ways to create new traditions. There are so many witty, clever, and enjoyable blogs out there to follow that I had no idea about before I dove into the world of Pinterest. BIG FAN over here. (I believe it is how I found your blog)

    I tried to talk to my mom about Pinterest the other day, and she completely dismissed it as something for people who have too much time on their hands! She SO doesn’t get it.

  5. Oh my gosh…you scared me, a little. I thought maybe you were going to say how you hated people asking you stupid questions all the time and why didn’t they just Google it already. ‘Cause then I’d be guilty. Or maybe you WERE saying that and I am….guilty. At any rate I love rice pudding! I don’t like raisins though, so I will be sure to try all your rice pudding recipes, since it’s the closest thing to a rice pudding shop I’ll ever see. This will be my first. Love cheesecake, love peppermint!

  7. Found you through Pinterest and I”m so with you. I couldn’t have said itbetter myself! I was one of those that took 4-ever to join because I didn’t want to get sucked in. I’m sucked in and I LOVE IT! Much better than reading the whole blog of someone just to getto the one place you saw last week. LOVE rice pudding but have never made it and you’ve combined 2 of my favorite flavors ๐Ÿ™‚ Looking forward to stalking you and trying more of your pudings ๐Ÿ™‚

  8. everyone that I ask ‘Pinterest, heard of it?” they ALL, and I mean even my faceboook friended coworkers that see my pin notices constantly, they ALL act as if I don’t know what I am talking about. I totally expect them to burn in hell over it. LOL kidding!! Thanks for this incredible looking rice pudding, will post back with results.

  9. My mom dismisses my emails. She thinks they’re not real conversation. Everything has to be repeated that was in the email, on the phone or in person (the ones she sends me.) If I ask he about a specific email I sent her, she waves it away and says something like , “oh I don’t really check my email.”

    Of course when she comes for a visit she’s on her phone te whole effing time. Just a little bitterness here.

  10. just to let you know, i couldn’t find the Andes peppermint … so i decided to use Heath Toffee Bits.. and took your salad to a brunch this morning…it was a HUGE hit!!! So there is another option to try…. cheesecake rice pudding with toffee bits!!!

  11. I loved Pudding on the Rice!!!! I still get sad when I drive by there and it’s gone. ๐Ÿ™ I’m so glad I found this via pinterest! I’ve been craving rice pudding but didn’t know how to make it!!! SOO excited to try these!!!
