This is my mom’s famous banana bread recipe, and it’s one of my favorite foods from my childhood! It’s a fabulous way to use overripe bananas, bakes up in muffin form nicely, and freezes exceptionally well.

We definitely consider this a staple recipe in our family, and I’ll take that a step further and say it’s a staple in my comfort food repertoire. I think it has emotional healing properties… especially effective for taming wild hormonal outbursts.

And, er… I can personally vouch for that last bit.

I love my mom’s baking. And her banana bread is like a great, big chocolate-chippy hug from her (we definitely express our love in chocolate chip and M&M form in our family).

So… if you ever need a hug from my mom, make this bread. It’s pretty much the exact same feeling ;)

Chocolate Chip Banana Bread

Ingredients

  • 1 1/2 cups All Purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 2 slightly beaten egg whites
  • 4 medium, overripe bananas
  • 3/4 c. sugar
  • 1 teaspoon vanilla
  • 1/4 c. vegetable oil
  • 1 c. semi sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mash the bananas (I usually beat mine in my stand mixer using the paddle attachment) until mostly smooth.
  3. Mix in the egg whites, sugar, vanilla, and oil, mix well.
  4. Add the flour, baking powder, baking soda, cinnamon, and salt. Only mix until the batter forms. Fold in the chocolate chips using a rubber spatula.
  5. Pour batter into a greased and parchment lined loaf pan. A standard loaf pan will need to bake for about 45 minutes. Baking time will vary depending on the size of the loaf pan. A toothpick should come out clean before the removing the bread from the oven.
  6. Let cool for at least 10 minutes before slicing.

    This recipe is absolutely delicious and extremely easy to make. I made half the quantity and ate almost the entire thing. My husband, who doesn’t have a sweet tooth loved it as well, although he only got a couple of pieces.i am entertaining this weekend and am going to check out some more of your excellent deserts- hope to find some more of your moms recipes.

    Any tips for making muffins instead of a loaf? I think these would be perfect for Christmas gifts, and I’m not up for baking several loaves. :)

      Just pour the batter into muffin liners and bake for 20 minutes :) We do this often!

    This looks SOSOSO yummy!! It’s very similar to my recipe! I’ve tried making it with applesauce, whole wheat flour, etc. but it’s just not quite the same. YUM!
