I was pretty stinkin’ excited about this cake! I’ve made rainbow cupcakes before, and they turned out wonderfully. But I thought it might be more difficult to layer the colors in a normal cake, and I was really worried that the colors might bleed a little after the addition of the sweetened condensed milk. But not so!

This cake is wonderfully EASY to make, and the colors stand out beautifully! I topped mine with Golden Oreos, because I really wanted to incorporate something “gold” to give it even more of a St. Patrick’s Day feel. But you could totally top it with anything you can think of! Maybe Rainbow Sprinkles for a Rainbow themed party? Or white chocolate curls could make it a little more… grown up (plus delicious)? Or if you can get your hands on some really great edible golden flecks, that would be just gorgeous.

Or maybe top it with chocolate gold coins for a St. Patty’s day party, that would be really impressive too.

I also think this would be pretty awesome for a team party– just use team colors, so it’s like a tye-dye cake. Seriously, the possibilities are endless. And it’s SO SIMPLE! Plus, everyone loves a good Poke Cake, so make sure to whip this up the night before your next party!

Better than a Pot Oโ€™ Golden Oreosโ€ฆ Rainbow Poke Cake

Ingredients

  • 1 white cake box mix + ingredients listed on box (or make your own batter from scratch
  • Food Color Gel
  • 1 - 8 oz tub Cool Whip
  • 14 oz can sweetened condensed milk
  • 15 Golden Oreos, crumbled

Instructions

  1. Mix the cake batter according to the directions on the box. Divide the batter into six bowls (it comes out to a heaping 1/2 cup per bowl).
  2. Dye each bowl of batter a different color (red, orange, yellow, green, blue, and purple).
  3. Pour each bowl of batter into a well greased 9x9 cake dish. Don't try to marble or swirl the batter. Just pour each one right into the center of the dish, one on top of the other.
  4. Bake according to the directions on the box, approximately 45 minutes. Toothpick inserted should come out clean. Let cool completely.
  5. Poke holes evenly throughout the cake (roughly 20 holes). Pour the sweetened condensed milk over top of the cake, trying to fill the holes as much as possible.
  6. Spread the cool whip over top of the cake. Sprinkle the oreo crumbs on top.Cover and chill for at least 4 hours, overnight is really best.

Notes about this recipe:

This recipe is usually made by baking the cake in a 9×13 pan. I wanted the colors to be stacked really well, so I went with a 9×9 pan. It should work either way, but you may not get all of the colors in one slice if you use a larger baking dish.

Do you think I could make this in a spring-form pan, or would it be too ooey gooey… My son’s 2nd birthday is on Mar 18th and I wanted to make him a cool cake for his daycare class that they could use as a learning tool also. If I use a springform pan, they would be able to see all of the layers…

    • Unfortunately, I don’t think a springform pan would work, although, I see the appeal! A couple of options though– you could bake it in two foil lined round pans and make it a layered cake. You’d have to omit the sweetened condensed milk (probably not a bad idea for preschoolers anyway ๐Ÿ˜‰ ) if you did that. Or, bring it in a clear glass dish, then you could see the layers through the dish. Or, make cupcakes (again omit the sweetened condensed milk). That way each kid could have his own and see all the layers in one cupcake!

    • If you don’t like SCM, you could try using pudding! But, yes… something like SCM is pretty necessary. Otherwise it’s just cake with cool whip on top ๐Ÿ™‚

  3. I am wondering if this cake recipie could be frosted with regular frosting or is it too moist? I would love to make it for my daughters first birthday!

    • I’ve never tried it with regular frosting, but it does seem like it might be a bit much… does she have a food sensitivity that doesn’t allow for the cool whip? There are some alternatives to that!

      • No food allergies. I just didn’t think I could decorate it with her name and put a candle in it if it was cool whip.

  5. This was such a hit! I sliced it into individual portions and took it to a bake sale at school. It disappeared really quickly! Everyone loved how colorful the poke cake looked, especially the children. It was enjoyable to make as well. ๐Ÿ™‚
