I’ve shared my love of this peanut butter granola many, many times here on the blog and on my Instagram account.

And, of course, you already know how much I love chocolate chips, oatmeal in baked goodies, and coconut.

So let’s bring all of that together, shall we? Into one amazingly delicious, energy-packed, mostly pretty wholesome Almond Joy Granola Bite!

Want to know what really surprised me about this recipe? How much it really does taste like an Almond Joy! All along I had planned to name these “Almond Joy Granola Bites.” But that was just because I was including coconut, chocolate, and almonds in the recipe– I figured it was the most succinct way to let people know what flavors were in these little bites of granola.

Never did I imagine that when the almond butter, coconut, and the honey mixed together, they would make a lovely medley of coconutty sweetness that was truly reminiscent of the inside of an Almond Joy candy bar! How lucky was that?!

But these little guys have so much more going for them than taste alone.

They are packed full of (mostly) wholesome goodness. Let’s break it down:

Almonds and almond butter. So much good, healthy fat, fiber, and even some protein.

Honey. Aside from the chocolate chips (which you could make as un-sweetened as you wanted to, depending on the type of chocolate you use), there is no refined sugar in these granola bites.

Oatmeal– and lots of it! Oats are one of the best grains for our bodies. I don’t know all the science behind it exactly, but I know the gist is that they keep us feeling satisfied and go easier on our blood sugar than other carbs while still fueling us with the energy we need.

There’s a good bit of coconut in there too! I used sweetened flaked (this is a dessert blog, after all), but you can most definitely use unsweetened.

This is such a great make-ahead recipe to keep on hand for quick school-day breakfasts on the go! Enjoy :)

Almond Joy Granola Bites

These delicious bite-sized treats pack in the healthy fats and wholesome grains little ones need to start the day off the right way. 

Ingredients:

1/2 cup almond butter

1/2 cup honey

2 cups old fashioned oats

1/2 cup sliced almonds

1/2 cup miniature chocolate chips

1/2 cup shredded coconut

Directions:

Whisk together the almond butter and honey until smooth.

Fold in the oats, almonds, chocolate chips, and coconut.

Scoop two tablespoons and roll into balls. Keep chilled until ready to eat!
