Have you heard of Pudding on the Rice?
If you've lived in Utah County in the past few years, you may remember we had one.
You know, just across the street from the Olive Garden?
(Because everything revolves around where that Olive Garden is.)
It came and went pretty quickly.
I'll never understand why it didn't work out.
Location was good. Pudding was outstanding.
And I spent all my money there.
That should have been enough, right?
You would think.
But like it or not, they closed up shop.
Leaving me rice pudding-less, my only option to craft my own recipe...
I lurved "Ebony and Ivory."
And I've finally gotten around to making a copycat!
And it's waaaaay lower in calories and fat :)
Happy day.
Ebony and Ivory Rice Pudding
Ingredients:
- 2 1/2 cups cooked (and cooled) white rice
- 1 small package instant sugar-free fat-free chocolate pudding mix
- 1 1/4 cups fat free milk
- 1 small tub cool whip lite
- 1/2 cup white chocolate chips
- 1/2 cup milk chocolate chips
"Wait fooooooor it!" (any Psych fans out there?)
(and I wouldn't share if I were you...)
**this should really be chilled over night or for at least 5 hours (so the rice really soaks up the pudding and the chips can soften a little bit), but if you just can't wait... well, I totally understand. :)
{side note disclaimer} yes, yes, I know this is not an authentically made, from-scratch rice pudding. But it's going to rock your world. So make it.

I'm positive I had commented on this post when you linked to it the first time. Blogger must be having some quirks again. Anyway, this store sure seems original to me, and not a copy cat. There aren't any pudding stores where I live.
